That perfect juicy meat and crispy skin in 40 minutes! You will swear it’s the juiciest flavorful chicken you ever tasted.

The wondrous aroma of coriander and citrus that perfumes the house provokes a feeling of excitement.

You still don’t know what to cook for the weekend? Watch that golden brown and gleaming chicken! Simply elegant and inviting!

To try it you need:

  • 12-14 pieces of chicken (could be thighs, drumsticks or breast)
  • 4 medium potatoes sliced
  • 1/2 cup of olive oil
  • 2 lemons (one juiced and one sliced)
  • 1 sliced orange
  • 1 tsp garlic powder
  • 1 tsp dried coriander
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • fresh coriander for garnish

Directions:

In a bowl mix together oil, lemon, garlic, coriander, onion, salt and pepper.

Soak in the chicken for marination and transfer all to a baking plastic bag. Leave it for 3-4 hours or better for an overnight in the fridge.

Take your chicken out of the fridge 30 minutes before it goes into the oven.

Preheat your oven to 220°C.

Place chicken in a baking dish and spread them evenly. Arrange slices of lemon, orange and potato around and under the chicken. Sprinkle with fresh coriander and drizzle a bit of olive oil.

Bake uncovered for about 40 to 45 minutes, et voila!!

finger – licking lebanese taboule as it should be done


When you type “taboule” in the search engine, you get endless recipes, some don’t even resemble the original one.

This recipe is the traditional lebanese taboule as it should be done!

Ingredients:

  • 4 medium bunch of parsley
  • 2 medium tomatoes
  • 1 small fine chopped onion
  • juice of 2 lemons
  • 1/2 cup of olive oil
  • 1 tbsp of chopped mint
  • 1 tsp salt
  • 1/2 tsp sweet pepper
  • 2 tbsp bulgur (aka burghul)
  • lemon zest

Method:

Gather the parsley in small bouquets, easier to be chopped. Choose the tomatoes half ripe and cut in medium cubes

These parsley were sent to me overseas from lebanon, thanks to my father, knowing that i love taboule.

Add the mint, onion, salt and pepper to taste, lemon, olive oil and burghul.

Soak the burghul in room temperature water for 5 mns before adding them.

the lemon zest is not a main ingredient but it gives the zing flavor (mom astuce).

Mix all together and taste. You can always add salt or lemon depending on how sour you like it to be. Taboule is the healthiest salad ever. Some have it as an entree and others as a main dish since it’s a complete meal full of nutrients.

I like to eat taboule with lettuce, cabbage, vine leaves and even bread!

orzo, spinach and chicken salad


orzo, chicken and spinach saladCraving a dinner that is delicious, nutritious, and simple to make?

This salad is a full meal. It contains all the nutrients you need at one time.

The first time i tried this salad was in an italian restaurant. I loved it and decided to do it at home, and the result came tastier!

Ingredients (for 4 people)

  • orzo pasta 500g
  • grilled chicken breast 400g
  • fresh spinach 350g (chopped)
  • feta cheese 80g (cut in small cubes)
  • 2 medium tomatoes (cut in medium cubes)
  • olives 50g
  • roasted pine seeds (a handful)

Dressing: lemon and olive oil

Why lemon? because there’s a compound in spinach called oxalic acid, which blocks the absorption of calcium and iron. An easy way to solve this problem is to pair spinach with a food high in vitamin C.

breakfast mouseNothing is worth the look on your baby’s face when he sees this breakfast! it’s friday meaning it’s the weekend in Qatar. No work, no nursery let’s have fun. It’s breakfast time.

It’s a smart way to let your baby eat his breakfast if you find difficulties. In the same time he learns the colors and shapes.

All you need is to buy a flower shape cutter and I am sure the rest is available at home.

IMG_8392Use the cutter to prepare the carrots for the flowers. You can cut tomatoes and cucumbers as well, choose the vegetables your baby like.

– Lemon slice for the sun shape

– Cut a triangle out of your baby’s favourite cheese.

– Two slices of the cucumber for the mouse ears.

– Cut the end of the olive for the nose and two small pieces for the eyes.
