Sup up your sandwich 2 – chicken avocado

Many of you find no time to cook dinner after long days at work, with kids or simply not fan of cooking. Sandwiches come to rescue the situation and satisfy your cravings; You can sup up any simple sandwich to become a consistent delicious meal. Not just that, it’s a pleasure to the eye also with all these colors blend.

All you need is the right and a smarter choice of pairing your sandwich ingredients. Today i will continue this sandwich makeover sequel with this finger – licking chicken avocado sandwich. You will need:

  • chicken breasts, enough quantity to your sandwich(s), lets say 500g make 4 sandwiches
  • 2 tbsp olive oil
  • 1 tbsp garlic powder (or garlic salt)
  • 1 tsp salt
  • 1 big avocado
  • rocket leaves
  • Cesar dressing
  • bread of your choice, i used ciabatta bread

Season the chicken with the garlic and salt and cook them in olive oil. Lay them on a bed of rocket leaves, this very low in calories vegetable; 100 g of fresh leaves hold just 25 calories. Nonetheless, it has many vital phytochemicals, anti-oxidants, vitamins, and minerals that may immensely benefit your health. Add 2-3 slices of avocado; buttery avocados are a good complement to sharp flavors like garlic. They are high in fat, but 64% of it, is the heart healthy monounsaturated. They also offer good nutrients like vitamin E and potassium. Drizzle some cesar dressing and enjoy!

This type of sandwiches could also serve as a lunch with a nice side salad, not just a light dinner.

Thai chicken noodles with sesame and sweet soy sauce

I must admit that i approach any Thai meal with blind faith! I mentioned before my devotion and love to Thai food and how it tickles my senses with all its beauty, colors and aromas.

I like to cook all types of cuisines but when it comes to Thai, i believe it’s kind of art and every dish is a master piece. This colorful sesame chicken noodles is so flavorful and easy to come together!

You will need: (4 servings)

  • 400g noodles cooked as per pack instructions
  • 500g chicken breast cubed or cut lengthwise
  • one big onion chopped coarsely
  • 1/3 cup sesame oil
  • 2 big carrots cut thin and lengthwise (about 1 cup)
  • 2 medium capsicum (green and red) cut in medium squares (about 1/2 cup)
  • 1 /2 cup red cabbage chopped coarsely
  • 1/2 cup sweet soy sauce
  • 2 tbsp sweet chili sauce
  • 2 tbsp white vinegar
  • 2 tbsp water
  • 2 scallions chopped coarsely (about 1/2 cup)
  • 4-5 mushroom sliced (about 1/2 cup)
  • sesame seeds for garnish

Heat up the oil then add chicken and onion, stir-fry until onion is fragrant and chicken starts to turn opaque. Add carrots, capsicum and cabbage to cook for 3-4 minutes. Pour in sweet soy, sweet chili, white vinegar and water and simmer for 5-7 minutes or until the veggies starts to get a bit tender. Stir in scallions and mushroom then simmer again for another 2-3 minutes.

Serve with cooked noodles (or if you prefer steamed rice) after sprinkling some sesame seeds on top (as per your taste).

It’s quick, served in 20 mns and not complicated at all. A delicious dish packed with deep flavors. It’s the type of dishes, while eating, i wish to have leftovers for next meal!

Chicken pesto with spaghetti

It’s a one great pesto recipe to whet your appetite. I love to see heaping dishes getting relished, one of the best days when i cook to my family and leave them with a big smile and clean plates. It means it was a memorable meal!

A Spaghetti dish with chicken and especially pesto that comes to boost the flavor quotient and intensify the pleasure. You will need to prepare it: (yields 4 servings)

For the pasta:

  • 1 pack of spaghetti
  • 1 cup pesto sauce
  • 1/4 cup olive oil
  • 1/4 cup garlic oil
  • salt to taste

For the chicken:

  • 4 big chicken breasts cut lengthwise
  • 3 tbsp olive oil
  • 2 tbsp garlic oil
  • 1 tsp garlic powder
  • 2 tbsp pesto sauce

 

  • roasted pine nuts for garnish (1/2 cup almost)
  • parmesan or emmental cheese for garnish (1 cup almost)

Boil spaghetti as per pack instructions and sauteed it with olive oil, garlic oil and pesto.

Marinate the chicken with the olive oil, garlic oil and garlic powder and cook them until nicely golden. Add the pesto sauce and combine well.

Put a generous bed of pasta, top it with chicken (as per your taste), garnish with pine nuts and cheese.

Serve it warm and enjoy the symphony of flavors. Who is counting calories? i personally don’t, i am just counting memories! Enjoy your precious time with your family and make the best out of it.

Coriander and garlic roasted chicken

Coriander is one of my favorite herbs in cooking, especially when it comes to Lebanese food. I adore that peculiar and unique smell plus the taste that adds to the food.

Coriander and garlic chicken is a relish. Doesn’t require efforts or skills, just prepare the marinade and give it time in the oven to obtain this perfect juicy meat and crispy skin.

Serving 4-6 people you will need:

  • 12-14 pieces of chicken (could be thighs, drumsticks or breasts)
  • 1kg potatoes cut in medium cubes
  • 1 bunch of coriander
  • 8 garlic cloves
  • juice of 2 lemons almost 3/4 cup
  • 1/2 cup olive oil
  • 1 tsp salt

In a food processor blend coriander, garlic, lemon and salt until smooth. Poor it over the chicken, add the olive oil and store in a bag for marination. Keep it in the fridge for an overnight.

Take it out of the fridge 30 minutes before baking. Put together with the potato cubes in a baking dish and bake uncovered on the middle rack for an hour on 200°C.

Moghrabyeh (semolina dough grains)

Lebanese cuisine gained its reputation for the mezzeh, tabbouleh and raw meat…. But if you are fan of hard core Lebanese food, Moghrabyeh should be one of your favorites.

Moghrabyeh, are grains (shaped like small balls) made of semolina, available as dry or frozen. This dish is deep in flavor due to caraway and cumin seasoning. You can prepare it with chicken (thighs or breast) or beef shank (aka mawzet) or even both. My recipe calls for chicken, the most common one.

For those who thinks it’s hard to prepare this dish, follow me step by step you will change your mind.

Step1: cooking the chicken

Ingredients:

  • 1 1/2 kg chicken (10 pieces approximately), thighs or breast
  • 1tbsp salt
  • 1 tbsp ground caraway
  • 1 tbsp cumin powder
  • 2 tbsp butter
  • 1 tbsp vegetable oil

Season the chicken pieces with salt, caraway and cumin. Fry in butter and oil until golden brown (about 5 minutes each side). The reason to mix butter with oil beside the lovely taste, the oil helps the butter not to get burnt quickly.

Step2: cooking chick peas and onions

Ingredients:

  • 10 small onions
  • 2 cups chick peas canned
  • 1 tbsp butter

Fry onions with butter until tender and fragrant, then add the chick peas and fold together for about 2 minutes.

Step 3: making the broth

Add the onions and chick peas to the chicken. Pour 6 cups of water. Put a small cinnamon stick and simmer for 30 minutes to get a chicken broth.

Step4: Preparing the moghrabyeh grain and the sauce

Ingredients:

  • 1kg of dry moghrabyeh
  • 1 tbsp butter
  • 3 cups of the chicken broth
  • 5 cups of hot water
  • 1 tsp salt
  • 2 tsp ground caraway
  • 1/2 tsp cumin powder

Remove the chicken from the broth. In a deep pot put the moghrabyeh grains and cover with 3 cups of the chicken broth already prepared and 5 cups of hot water. Put the butter, salt, caraway and cumin. Cover the pot and put it aside until the moghrabyeh gets tender in texture like pasta.

With the remaining broth, add one tbsp flour and 1/2 tsp of cumin powder, cook on medium low heat to thicken. Keep in it the chick peas and onions.

Serve the moghrabyeh grains with the chicken and sauce.

Astuces:

  • Put the sauce on individual portions as the moghrabyeh absorb the sauce if it stays long time in it.
  • If you are cooking frozen moghrabyeh, it’s the same method but requires half of the quantity of broth/water
  • If you are not willing to use canned chick peas, soak the dry chick peas in water a day before until it doubles in size.

Enjoy this full flavor dish, it’s one of the dishes you can’t enjoy cooked light, make it as it should be done without counting calories. Anyways it’s not an everyday dish.
