These colorful rolls bring sweet memories for me, they remind me of my favorite asian restaurant when i used to live in Bahrain, These rolls were on my to cook list for so long. Usually they are called Vietnamese fresh rolls, but since it’s not the classic recipe, i didn’t dare call them so! This is my own version of fresh rolls using a symphony of ingredients that i found going heavenly together.

These effortless rolls are the freshest, nutrient packed, crunchy and sweet while looking fabulously colorful! Finally, having them ready on my plate, these happy rolls added some brightness to my day!

Usually they are served with a Vietnamese peanut sauce made of peanut butter and hoisin sauce which is thinned out with either milk or water, vinegar for a bit of tang, garlic and a touch of chilli. Personally, i prefer the Thai sweet sauce! It’s all up to your taste at the end.

To prepare 15 rolls (one pack) you will need:

  • 1 pack of rice paper (about 15 papers)
  • 500g shrimps cooked and deveined (you can also broil in the oven)
  • 1 medium mango cut a la julienne
  • 1 avocado sliced
  • 4-5 iceberg leaves
  • a bunch of fresh mint leaves
  • a bunch of fresh basil leaves
  • 2 medium carrots finely julienned

Take 1 rice paper and place in a shallow plate filled with warm water. Allow rice paper to soften for about 10 seconds. Remove and lay flat on working table – be gentle so you don’t rip the delicate paper. If this is your first time to use this type of paper, you will rip some in the beginning until u get used to 🙂

Start layering all veggies and fruits in the center of rice paper, Start with the lettuce so it holds the other ingredients. On the top part of the rice paper, place 3 shrimps with a mint leaf in between, or avocado to have the final look as per the photo below. Your rice paper rolls should look pretty with the shrimps and mint leaves or avocado on the smooth side of the roll and the seam on the underside of the roll.

Fold the left and right edges of the rice paper in, then starting from the bottom, roll up to cover the lettuce bundle, keep rolling firmly to reach the shrimps.  The rice paper is sticky, it will seal itself.

Serve immediately with the dipping sauce. These rolls are to be eaten fresh and on the spot, with time the rice paper gets dry and chewy.

Sup up your sandwich 3 – crab orange

Many of you find no time to cook dinner after long days at work, with kids or simply not fan of cooking. Sandwiches come to rescue the situation and satisfy your cravings; You can sup up any simple sandwich to become a consistent delicious meal. Not just that, it’s a pleasure to the eye also with all these colors blend.

All you need is the right and a smarter choice of pairing your sandwich ingredients. Today’s i third option of sandwich makeover is crab and orange. You will need (yields two sandwiches):

  • 8-10 crab sticks shredded
  • 1 ripe avocado
  • 1 small orange
  • rocket leaves (a bunch of 14-16 leaves)
  • capers (around 1 tbsp) – optional
  • bread of your choice (mine is multi cereal bun)
  • mayo citrus dressing

Start with a coat of the dressing on the bun, actually the two halves of the bun, this way the bread absorb the dressing and it won’t fall off making a mess while eating. To prepare this sauce mix:

  • juice of a lemon
  • 2 tbsp juice of orange (half an orange almost)
  • 1 tsp brown sugar, let it melt in the citrus mix
  • 3 tbsp mayo

back to the sandwich, add the shredded crab sticks and one round slice of orange. Orange is a nice fruit for a tangy flavor that goes really heavenly with the crab and the buttery avocado.  Avocados are high in fat, but 64% of it, is the heart healthy monounsaturated. They also offer good nutrients like vitamin E and potassium.  Then 7-8 rocket leaves, this very low in calories vegetable; 100 g of fresh leaves hold just 25 calories. Nonetheless, it has many vital phytochemicals, anti-oxidants, vitamins, and minerals that may immensely benefit your health. Finally capers (optional), the small pickled flower buds imparting big and bold taste, to add a vibrant flavor to your sandwich, only if you’re fan of the taste.

  • chicken breasts, enough quantity to your sandwich(s), lets say 500g make 4 sandwiches
  • 2 tbsp olive oil
  • 1 tbsp garlic powder (or garlic salt)
  • 1 tsp salt
  • 1 big avocado
  • rocket leaves
  • Cesar dressing
  • bread of your choice, i used ciabatta bread

Season the chicken with the garlic and salt and cook them in olive oil. Lay them on a bed of rocket leaves, this very low in calories vegetable; 100 g of fresh leaves hold just 25 calories. Nonetheless, it has many vital phytochemicals, anti-oxidants, vitamins, and minerals that may immensely benefit your health. Add 2-3 slices of avocado; buttery avocados are a good complement to sharp flavors like garlic. They are high in fat, but 64% of it, is the heart healthy monounsaturated. They also offer good nutrients like vitamin E and potassium. Drizzle some cesar dressing and enjoy!

This type of sandwiches could also serve as a lunch with a nice side salad, not just a light dinner.

Purslane, avocado and rocket salad

An easy and quick salad for those hot days when you look for a refreshing breeze. The blend of purslane, rocket, avocado, tomato, onion and pomegranate seeds make it so flavorful and nutritious.

In the beginning i found it a bit awkward to add purslane to this salad, i am used to the traditional one that mom used to make for us with tomato and cucumber. But since i am a lover of these soft leaves i wanted to give it a try and add it to this unconventional salad.

For those who doesn’t know, purslane leaves have more omega 3 fatty acids than in some of the fish oils. Surprisingly, 100 grams of fresh purslane leaves provide about 350 mg of alpha linolenic acid. Research studies show that consumption of food rich in omega 3 fatty acids may reduce the risk of coronary heart disease and stroke.

Without forgetting it’s very low in calories (just 16 kcal/100g) and fats. This amazing green leafy vegetable is also rich in dietary fibers, vitamins (A, C and some B complex) and minerals (iron, magnesium, calcium, potassium, and manganese). Isn’t it magical?!

For two, you will need:

  • purslane leaves, almost two cups
  • a bunch of rocket leaves, almost 3 cups
  • one small onion cut a la julienne
  • one medium tomato coarsely chopped
  • one big avocado sliced
  • half cup pomegranate seeds

Mix all together and serve with a vinaigrette dressing (apple cider vinegar, dijon mustard, olive oil and salt), or lemon and olive oil. Choose upon your taste.

Vegetarian or vegan people will cherish this treasure. If you are avoiding animal products, go for this healthy dark green leafy vegetable and enjoy all the benefits of fish! I am sure i will be testing other ways to use this highly beneficial purslane and most of all succulent.

Smoked salmon and crab sandwich

An utterly craveable sandwich, for a NO cook day, doesn’t require skills and the best part it’s ready in less than 10 mns. So if you feel like treating yourself effortlessly, enjoy this elegant sandwich.

To make 2 sandwiches you will need:

  • 6 slices of bread (could be toasted)
  • 150g thin slices smoked salmon
  • 100g imitation crab meat, shredded
  • 1 medium avocado pitted and mashed
  • 1 1/2 tbsp lemon juice
  • 1 tbsp capers
  • 1 1/2 tbsp cream cheese
  • 3-4 roman lettuce leaves

Start by spreading on the first layer of bread the mashed avocado and lemon, then a layer of the shredded crab. Cover with a second layer of bread, spread cream cheese, lay thin slices of smoked salmon, a layer of lettuce and sprinkle some capers. Top it with the third layer of bread and serve.

You can use toasted bread or simply sliced from the loaf. Personally i like it toasted, if you do then you need to let it cool before making the sandwich, if the bread is hot, it might change the taste of the ingredients.

If you like onion, you can add couple of rondelles, or maybe substitute lettuce with rocket leaves. It’s a versatile sandwich, you can add whatever you like to pair with crab and salmon.

I am sure only by looking at the pictures your mouth is already watering. Wait until you try it, you will fall for it.
