Coriander is one of my favorite herbs in cooking, especially when it comes to Lebanese food. I adore that peculiar and unique smell plus the taste that adds to the food.

Coriander and garlic chicken is a relish. Doesn’t require efforts or skills, just prepare the marinade and give it time in the oven to obtain this perfect juicy meat and crispy skin.

Serving 4-6 people you will need:

  • 12-14 pieces of chicken (could be thighs, drumsticks or breasts)
  • 1kg potatoes cut in medium cubes
  • 1 bunch of coriander
  • 8 garlic cloves
  • juice of 2 lemons almost 3/4 cup
  • 1/2 cup olive oil
  • 1 tsp salt

In a food processor blend coriander, garlic, lemon and salt until smooth. Poor it over the chicken, add the olive oil and store in a bag for marination. Keep it in the fridge for an overnight.

Take it out of the fridge 30 minutes before baking. Put together with the potato cubes in a baking dish and bake uncovered on the middle rack for an hour on 200°C.

As the weather is getting hot and hotter, all you need is a refreshing meal; I can say salads and summer goes really well.

Salad is a versatile option served as appetizer, side dish or even main dish. In the last case, the salad should be filling, featuring carbs or meat.

Usually salads are no fail recipes, they leave you the room to be as much creative you want to be in the choice of ingredients and mixing them together. Beside of having a quick meal, ready on your table within 20 mns, you will be enjoying a sustaining dish full of nutrients.

For the salad you need

  • 1 kg shrimps cooked
  • 1 cup orzo pasta cooked
  • 1 medium mango cut lengthwise
  • 1 small golden apple cut in medium cubes
  • 2 cups pineapple cut in medium cubes
  • a handful coriander leaves

For the dressing you need

  • 3tbsp mayonnaise
  • 1/2 cup pineapple juice
  • 1 tsp lemon juice

You can serve it cold from the fridge or at room temperature, but in both cases you are going to indulge in a symphony of flavors.

Baked salmon with avocado salsa


baked salmon with avocado sauceThere is no better reward than this juicy flaky salmon baked to perfection and presented with the co-star avocado sauce.

I am fond of salmon to begin with. This fantastic dish doesn’t require efforts or skills, very easy to do and can be on your quick meals list. Whether you feel lazy or coming back tired after a long day at work, you can serve this dish at your table in less than 30 minutes.

Season two salmon fillets with salt (i was preparing a meal for two, you can adjust the ingredients depending on how many persons you are serving). Line your baking dish with a large piece of foil and place them. Squeeze half a lemon to drizzle juice over the fillets and cut the other half in rondelles to place on top as well. Wrap the edges of the foil to keep the salmon moist! Bake for about 15-20 minutes or until flaky and tender.

Meanwile to prepare the sauce you need:

  • one big avocado
  • one small onion finely chopped
  • juice of half a lime
  • salt to taste
  • a handful corriander

In a processor pulse the avocado with lime and salt. Once done, fold in the onion and coriander.

Drizzle on top of your pink salmon and enjoy!

A small introduction for wonderers

Pilaf is the way of cooking the rice. Also known as pilav or palaw in which rice is cooked in seasoned broth. The yellow to brown color is attained by stirring in onion or spices. Depending on the cuisine it might have also meat, chicken, fish, vegetables or dried fruits.

Initially i was making a whole roast fish but didn’t want to present it solo. I thought of roast potatoes and vegetables then i said why not rice?!

To not go classic, i thought of rice pilaf with a twist! Ginger and cilantro, two of my favorite deep flavors that blends together perfectly. The outcome was heavenly tasty.

Ginger scented rice pilaf:

  • 1 1/4 cup rice
  • 1/2 cup carrots diced finely
  • 1/2 cup onion diced finely
  • 1 tbsp minced ginger
  • 1 tbsp olive oil
  • 1 cube vegetable bouillon (almost 5g)/ broth
  • 2 1/2 cups water
  • 2 tbsp fresh cilantro (coriander) chopped

Heat olive oil in sauce pan. Add ginger, onion, carrots and stir until fragrant for 3-4 minutes.

Add rice, bouillon and water and bring to boil. Cover with a lid, reduce heat to low and let it simmer for 20 minutes.

Remove from heat, cover the pan with a towel and let it sit for 15 minutes. Remove the lid and fluff the rice with a fork. Toss in the cilantro and taste to check if you need to add salt (optional) and serve immediately.

The house was full of aroma! Couldn’t wait until the fish was completely roast to start eating. If you are not fan of fish i am sure this rice will pair nicely with chicken, beef or prawns. I can even eat it alone!

To roast the fish there are many ways. My favorite is “en papillote”, the same principle as wrapping in foil with enough liquid to create steam, but using greaseproof paper to create individual portions when you are baking medium or small size fish.

I put chopped cilantro, lemon slices, lemon juice, salt, pepper (quantity as per your taste) and drizzled some garlic olive oil before wrapping the fish. Baked in the oven (for 240°C) for 20 minutes.

Fish is easily overcooked therefore care must be taken when using the oven. When roasting a whole fish always ensure the skin is on.

That perfect juicy meat and crispy skin in 40 minutes! You will swear it’s the juiciest flavorful chicken you ever tasted.

The wondrous aroma of coriander and citrus that perfumes the house provokes a feeling of excitement.

You still don’t know what to cook for the weekend? Watch that golden brown and gleaming chicken! Simply elegant and inviting!

To try it you need:

  • 12-14 pieces of chicken (could be thighs, drumsticks or breast)
  • 4 medium potatoes sliced
  • 1/2 cup of olive oil
  • 2 lemons (one juiced and one sliced)
  • 1 sliced orange
  • 1 tsp garlic powder
  • 1 tsp dried coriander
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • fresh coriander for garnish

Directions:

In a bowl mix together oil, lemon, garlic, coriander, onion, salt and pepper.

Soak in the chicken for marination and transfer all to a baking plastic bag. Leave it for 3-4 hours or better for an overnight in the fridge.

Take your chicken out of the fridge 30 minutes before it goes into the oven.

Preheat your oven to 220°C.

Place chicken in a baking dish and spread them evenly. Arrange slices of lemon, orange and potato around and under the chicken. Sprinkle with fresh coriander and drizzle a bit of olive oil.

Bake uncovered for about 40 to 45 minutes, et voila!!
