As the weather is getting hot and hotter, all you need is a refreshing meal; I can say salads and summer goes really well.

Salad is a versatile option served as appetizer, side dish or even main dish. In the last case, the salad should be filling, featuring carbs or meat.

Usually salads are no fail recipes, they leave you the room to be as much creative you want to be in the choice of ingredients and mixing them together. Beside of having a quick meal, ready on your table within 20 mns, you will be enjoying a sustaining dish full of nutrients.

For the salad you need

  • 1 kg shrimps cooked
  • 1 cup orzo pasta cooked
  • 1 medium mango cut lengthwise
  • 1 small golden apple cut in medium cubes
  • 2 cups pineapple cut in medium cubes
  • a handful coriander leaves

For the dressing you need

  • 3tbsp mayonnaise
  • 1/2 cup pineapple juice
  • 1 tsp lemon juice

You can serve it cold from the fridge or at room temperature, but in both cases you are going to indulge in a symphony of flavors.

Apple carrot cake


apple carrot cakeSometimes all you need is a simple and easy cake recipe for everyday. Breakfast or dessert, this is the wholesome cake to adapt. It has fruits (apple and carrots), nuts (walnut), eggs and milk.

It’s a complete meal or snack, made it healthier by replacing the butter with vegetable oil and using low fat milk.

So much flavors in a simple cake to enjoy and indulge.

apple carrot cakeYou will need: (9″ baking dish)

  • 5 eggs
  • 1 3/4 cup sugar
  • 1 tbsp vanilla
  • zest of one lemon (approx 1 tbsp)
  • zest of one orange (approx 1 1/2 tbsp)
  • 3/4 cup vegetable oil
  • 2 1/2 cup flour
  • 1 1/2 tbsp baking powder
  • 1 large carrot grated
  • 1 medium apple grated
  • 1/2 cup milk (low fat)
  • 1 cup dark chocolate chip
  • a handful walnut

Preheat oven on 180°C. Butter a 9″ dish and dust with flour then put it aside.

Start by mixing eggs, sugar and vanilla with electric mixer on high speed until light in color and fluffy. Mix in the lemon and orange zest and the oil and keep mixing for another 5 minutes on low speed.

Fold in the flour, baking powder, grated carrot, grated apple and milk. Mix gently until all ingredients are well incorporated.

Pour in the baking dish and bake for an hour or until a skewer comes out clean.

If you wish to wrap the cake with chocolate, sprinkle 1 cup dark chocolate chip on top when the cake is done and still hot then garnish with a handful walnut. If you don’t want to add chocolate, chop the walnuts and add them to the batter before baking.

apple carrot cakeIt’s so fluffy and rich, beware that one piece could drag another. In other words it’s addictive.

This cake is so versatile, you can add cinnamon if you’re fond of, and if you wish to enjoy a deep flavor,  you can add a pinch of nutmeg and clove.

Apple braid puff


IMG_4340Following the pear tart  i made two weeks ago, i found myself exploring more fillings for the puff pastry. Having the dough ready made (knowing that It’s not difficult to make at all, but time consuming), It doesn’t need too much pastry skills, it just takes someone who loves “les viennoiseries”.

This apple braid is the kind of sweet that i like albeit not too sweet. The combination apple cinnamon has it all!

IMG_4353To make this braid you need:

  • 400g puff pastry
  • 2 red apples (gala), core removed, washed and sliced
  • 2 tbsp brown sugar
  • 1 tsp vanilla
  • 1 tbsp cinnamon (or more, to taste)
  • 1 egg, beaten, for egg wash
  • granulated sugar, for sprinkling

Mix apple with sugar, vanilla and cinnamon and set aside. Preheat oven to 180°C.

how to do

Roll the pastry dough into a 30 cm x 30 cm square. Lightly divide it (without cutting) into 3 equal rectangles. Using a rotary cutter or simply the pizza cutter cut about eight strips, on the side rectangles. Leave the center rectangle intact. Remove the corner sections from each of the 4 corners strips.

Spread the apple cinnamon in the center section of the pastry. Fold the top flap down over the filling. Start by folding the top right strip over the filling slightly diagonal and press lightly to adhere. Then fold the top left stripe in the same manner. Repeat with the remaining strips until you reach the end, but before folding the last two strips make sure you folded the bottom flap.

Whisk the egg with one tbsp of cold water and brush the top of the braid then sprinkle with the sugar and bake for 20 mns or until golden and flaky.

So pretty to eat – elegant apple rose tart


apple rose tartApple rose tart are perfect for an elegant dessert and so easy to do. This was more of a technique than a recipe, that’s why i created a step by step unmistakable  scheme.

First you need to have:

  • one big red apple
  • 1 tbsp honey
  • 2 tbsp sugar
  • 3 tbsp water
  • 1 cup flour sifted
  • 50g butter

how to do apple rose tart– Wash and cut the apple in half. Remove the core and slice each half  (2-3mm thickness for each slice). Put the slices in a pot and add the honey, sugar and water. Cook for 5 minutes on a medium heat. Take out the slices to cool, but don’t get rid of the syrup, we will use them in the dough.

– To prepare the dough, mix the flour, butter and 4 tbsp of the syrup. knead until the dough becomes smooth. Roll out and cut in strips of 2.5 cm width and 25 cm length.

– Place on each strip 5-6 slices of the cooked apple, and roll it up. It will make around 8 small tarts, you can easily double the recipe if you want more.

– Bake in the oven (180°C) for 15-18 minutes. Take it out, brush with honey and serve! If you are a cinnamon lover you can also sprinkle some on top with the honey.

With few ingredients always available at home, you can make this elegant dessert. They were so tempting that i was eating them in my mind while preparing them.

Apples and crabs are Nady’s most liked when it comes to fruits or shower. What a combo to wow Nady! He was really fascinated with this fun snack. Is this real?

Very easy and simple to do. You only need a red apple to create this cool crab:

Cut two sides of the apple half centimeter from the center. Slice one side in 8 wedges to create the legs. Cut the two sides of the center, disregarding the seeds.

Put them on top of each other to cut symmetrical triangles to create the claws. Then place the other half we cut in the beginning to make the body.

With edible paint make the eyes to look more realistic. If you don’t have paint, simple use the seeds!
