Apple braid puff


IMG_4340Following the pear tart  i made two weeks ago, i found myself exploring more fillings for the puff pastry. Having the dough ready made (knowing that It’s not difficult to make at all, but time consuming), It doesn’t need too much pastry skills, it just takes someone who loves “les viennoiseries”.

This apple braid is the kind of sweet that i like albeit not too sweet. The combination apple cinnamon has it all!

IMG_4353To make this braid you need:

  • 400g puff pastry
  • 2 red apples (gala), core removed, washed and sliced
  • 2 tbsp brown sugar
  • 1 tsp vanilla
  • 1 tbsp cinnamon (or more, to taste)
  • 1 egg, beaten, for egg wash
  • granulated sugar, for sprinkling

Mix apple with sugar, vanilla and cinnamon and set aside. Preheat oven to 180°C.

how to do

Roll the pastry dough into a 30 cm x 30 cm square. Lightly divide it (without cutting) into 3 equal rectangles. Using a rotary cutter or simply the pizza cutter cut about eight strips, on the side rectangles. Leave the center rectangle intact. Remove the corner sections from each of the 4 corners strips.

Spread the apple cinnamon in the center section of the pastry. Fold the top flap down over the filling. Start by folding the top right strip over the filling slightly diagonal and press lightly to adhere. Then fold the top left stripe in the same manner. Repeat with the remaining strips until you reach the end, but before folding the last two strips make sure you folded the bottom flap.

Whisk the egg with one tbsp of cold water and brush the top of the braid then sprinkle with the sugar and bake for 20 mns or until golden and flaky.

IMG_4341This pretty braid is served any time of the day, for breakfast or dessert, warm or cold, with juice or even ice cream.

Pear cannelle puff pastry tart


IMG_4234It’s not so hard to live a delicious life. Not all seductive deserts need a lot of efforts, skills, ingredients or money. This impressive tart is served on your table in less than 20 minutes and cost me only 5$

This is my favorite desert, every time we dine at Paul, there is a small place reserved in my stomach for a pear cannelle tart. I am not a sweet lover, but this tart is exactly what i fancy; balanced flavors and not too much sweet. I decided to make it myself at home, the result was too much to resist!

IMG_4221For this quick and easy desert you need:

  • 1 sheet of puff pastry (to fit a pan of 22cm)
  • 3 pears sliced
  • 2 tbsp or almost 30g butter melted
  • 1 tbsp brown sugar
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 tbsp granulated sugar

Preheat oven on 180ºC. Lay the puff pastry sheet in the pan and torn the edges.

Combine the butter, brown sugar, vanilla extract and cinnamon, mixing well. Using a pastry brush, generously brush the top of the puff pastry.

Layer the pear slices on top of the puff pastry covering all the surface. Brush the top of the pears with the remaining butter mixture, and sprinkle with the granulated sugar.

Bake for 15 minutes or until the pastry is golden brown.

Bentota is a coastal town, located in the South of Sri Lanka. It is a tourist attraction, and a destination for water sports mainly surfing.

The beach was more amazing than i can describe. It’s a shame we didn’t spend at least 4 days there to get enough of it. But within our two days we managed to have lots of fun with Nady who was really a fantastic traveler!Nady

It’s absolutely true, we had a quality time as a family and created memories that will never be forgotten.

Bentota has a see turtle farm and hatchery, Kosgoda Where you can see five species of turtles-Green Turtles (Chelonia mydas), Hawksbill Turtle (Eretmochelys imbricata), Loggerhead Turtle (Caretta caretta), Leatherback Turtle (Dermochelys coriacea) and Olive Ridley Turtle (Lepidochelys olivacea). The eggs collected by the Villagers and Fishermen are purchased by the Kosgoda Hatchery and kept in sandy pens until they are hatched. The newly hatched ones are kept in seawater tanks and released to the sea in the night. This Hatchery alone has released more then 1,750,000 young turtles to the sea. An endowment by the Hasselblad Estate was responsible for the establishment of this hatchery.

The last thing we did before saying good bye to Bentota and Sri lanka is a boat safari by the madu river, the most beautiful lagoon of the southern Province of Sri Lanka. It is situated in Balapitiya within the Galle District . It opens to the Indian Ocean. We started our trip from captain’s boat house:

madu river safarimadu river safari madu river safariThere was several stops in the river, the first one was to the island of Mada Duwa (Cinnamon Island). When we arrived at the island’s wooden pier there was a number of fish spa pools, people sitting and dangling their feet in the river as hundreds of small fish eat their dead skin.  We took few steps to enter the island. We were invited to sit under a thatched shelter while a local man showed us how to strip the bark from a cinnamon branch. Then told us about the numerous uses and benefits of cinnamon and showed us how to make sections of thatched roofing from coconut leaves. When leaving and at the end of the pier there was baby alligators if you want to pose for a picture holding one. Personally i skipped this one, fearing any bad could happen to my kid!

In antiquity, Sri Lanka was known to travelers by a variety of names. Known in India as Lanka or Sinhala,  ancient Greek geographers called it Taprobane and Arabs referred to it as Serendib (the origin of the word serendipity) and Portuguese gave it the name Cellao translated to Ceylon in english.

Sri Lanka the land of lions is the paradise on earth . The beauty of the isle lies not just in its blue and golden beaches, evergreen  jungles, beautiful  mountains or waterfalls but also in its remarkable authenticity.

quench your thirst with homemade flavored water

Ditch boring water and satisfy your thirst with healthy all natural homemade quenchers.

Water is very essential to your good health, it makes up about 60% of your body weight. Every day you lose water through your breath, perspiration, urine and bowel movements, but since every system in your body depends on water to function properly, you must replenish its water supply. Studies determined that your water needs depend on many factors, including your health, how active you are and where you live but roughly we can say an adequate intake for men is 3 liters (about 13 cups) of total beverages a day and for women 2.2 liters (about 9 cups).

It’s a huge amount of water if you think about it and you are not a water lover! That’s why here is 3 homemade recipes for naturally flavored water with added health benefits, to encourage you meet your daily needs, and stay hydrated especially it’s getting really hot outside!

citrus kiss:

Slice up one lemon, one orange and one grapefruit, add them to one liter of water. The longer the ingredients steep, the stronger the flavor will be, so mix them up a few hours ahead depending on how strong you want the taste to be.

Apple cinnamon:

Wedge up one full apple and toss in one cinnamon stick. This one has a great kick, it helps boost your metabolism.

Cucumber, mint lemon:

Slice up one or two cucumbers and soak in handful mint leaves and one sliced lemon.
