There is no better reward than this juicy flaky salmon baked to perfection and presented with the co-star avocado sauce.
I am fond of salmon to begin with. This fantastic dish doesn’t require efforts or skills, very easy to do and can be on your quick meals list. Whether you feel lazy or coming back tired after a long day at work, you can serve this dish at your table in less than 30 minutes.
Preheat your oven to 200°C. Season two salmon fillets with salt (i was preparing a meal for two, you can adjust the ingredients depending on how many persons you are serving). Line your baking dish with a large piece of foil and place them. Squeeze half a lemon to drizzle juice over the fillets and cut the other half in rondelles to place on top as well. Wrap the edges of the foil to keep the salmon moist! Bake for about 15-20 minutes or until flaky and tender.
Meanwile to prepare the sauce you need:
- one big avocado
- one small onion finely chopped
- juice of half a lime
- salt to taste
- a handful corriander
In a processor pulse the avocado with lime and salt. Once done, fold in the onion and coriander.
Drizzle on top of your pink salmon and enjoy!
For a perfect meal you can serve with mashed potatoes, rice or pasta. I prefer mashed potatoes!

I guarantee you it’s the only way you will ever make your salmon from now on. The sweet and tangy flavors blend together to give you this flavorful salmon.
Beside of having a quick meal, ready on your table within 20 mns, you will be enjoying a sustaining dish full of nutrients, such as the amazing omega-3, vitamin B3, B6 and B12, protein and vitamin D.
Bottom line, eating salmon makes you smarter and happier!
To make the glaze you will need:
- 1/2 cup balsamic vinegar
- 1 tbsp honey
- 1 tbsp brown sugar
- 2 tbsp Dijon mustard
- salt to taste
Mix all ingredients and bring to boil for 5 minutes to thicken.
Place 4 pieces of salmon (each 200g) skin-side down on the prepared baking sheet. Cooking in baking papers keeps the fish deliciously moist as it bakes in its own juices, minimal cleanup needed later and it’s definitely more healthy than aluminium foil.
Brush with the glaze, bake for 10 minutes in the oven on 200°C, brush again with the glaze then bake uncovered for 5 additional minutes, until the fish flakes easily with a fork and is cooked through.
Transfer to your plate, you will see the skin will remain easily on the baking paper, add the remaining glaze and sprinkle with sesame seeds. Serve with potatoes, rice or pasta. This quantity serves 4 people.

This gracious salad is always a winning choice if you want to treat yourself or your guests. Before even knowing the ingredients, it’s enough to look at the colors blend to open up your appetite and make your mouth water.
I am sure you noticed by now that i am fond of goat cheese. I can pair it with anything, and trust me it’s irresistible with smoked salmon! For this salad you need: ( for 4 people)
- 200g smoked salmon
- 2 medium ripe avocado
- 150g goat cheese
- wedges of one lemon peeled
- mix green leafs (arugula, red oak, green oak and frisé)
Lemon mayo dressing goes well with the salmon.
