Spanish rice and shrimps

This is my new lunchtime invention! I heart cooking with shrimps and pairing it with a side filling dish. Today the Spanish rice is the awesome amigo.

If you are fan of the Spanish flavors, i encourage you to give it a try. Vamos to this flavorful quick, easy and foolproof recipe. I am sure you will end up with a staple recipe in your cooking book. I got lots of compliments 🙂

To serve two big portions you will need:

  • 400g cooked shrimps (oven baked or boiled) and deveined. Divided in 2x200g portions
  • 1 cup rice
  • 2 cups chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp sweet paprika
  • 1/2 tsp garlic salt
  • 2 tbsp olive oil
  • 1 medium onion finely diced

How to prepare the rice?

Heat the olive oil and cook the onion until fragrant and translucent. Add the rice and pour the chicken broth. If you prefer vegetable broth go ahead, it will still be as delicious. Mix all and add the remaining ingredients, tomato paste, paprika and garlic salt. Put 200g of the shrimps and keep the other 200g to serve it along with the rice for a nice presentation. When it starts boiling, cover your pot with the lid and let it cook on a very slow flame about 20-25 minutes or until all the liquid is gone.

This rice is a basic one for more other inventions, next time i will try it with beans or chicken. I will keep you posted. Happy cooking 🙂

Vegan whole wheat fusilli pasta

Oh marmite et ponponER’S how i miss you ❤

I woke up this morning and the first thing on my mind was marmite et ponpon. Back form the summer vacation and before getting overwhelmed by a packed schedule, i wanted to start with by a big fat i love you and i miss you.

I spontaneously chose the last post from the queue (the long queue, the really long queue) to share it with you, without thinking and without planning … All i can say (emotionally driven) i really miss you and miss my space where i share with you what i like to do the most.

Happy to reconnect with you after this long time!

Vegan whole wheat fusilli pasta is my recipe to share with you today. Serving 4, you will need:

  • one pack of whole wheat fusilli (cooked as per pack instructions, washed and drained)
  • 500b tomato puree
  • 1 big capsicum cut a la julienne
  • 2 cups broccoli
  • 1 1/2 cup fresh mushroom sliced
  • 5-6 small zucchini cut a la julienne
  • 2 big carrots shaved or thinly sliced
  • 1 cup black olive, seedless
  • 3 tbsp olive oil
  • salt and pepper as per your taste

Bring olive oil to heat and sautee the broccoli, carrots and zucchini for 2 minutes then add capsicum (choose the color you want), mushroom and olive to sautee all for another 1-2 minutes.

 

Pour the puree of tomato and cook the mixture 1 minute after boiling. You don’t want the veggies to be 100% cooked. The little bit of crunchiness will create a beautiful contrast with the pasta. Add salt and pepper as per your taste!

Mix the sauce with the pasta and serve it hot or maybe at room temperature. Bon appetit!

Beetroot and feta tart

The best recipes are the ones calling for few ingredients, done in no time and effortless! Served at anytime of the day is a bonus! I am describing my recipe of today; beetroot and feta cheese tart.

Beetroot, better called “superbeet”, is a round dark red vegetable, sweet, earthy and tender. Whilst beetroot has a sweet taste, its leaves, which also are edible, taste bitter. This vegetable is linked with better stamina, improves blood flow and lowers blood pressure. It was popular in Roman times to treat fever, wounds, skin problems and was used as an aphrodisiac.

If you don’t want fuschia hands, better wear gloves while working with it. No wonder why its color can be extracted and used as a natural food coloring. Try it with eggs at Easter time for a nice vibrant color!

For this recipe there is no exact measurements. You will need to roll out a sheet of puff pastry and cut it in medium squares (around 10x10cm), so it’s depending on how many squares you will make. I made 6 puffs, so i used a sheet of 300g. For that you need:

  • one medium beetroot boiled, and coarsely shopped into small pieces
  • 180g feta cheese crumbled
  • 2 tbsp thyme
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • egg wash

Heat the oven to 180ºC. Roll the pastry out into six squares as i already mentioned and score a 1cm border around the edge and brush it with egg wash.

Place them on the baking tray, scatter evenly the feta cheese, then the chopped beetroot. Sprinkle on top the thyme and bake for 20-30 minutes or until the pastry is well puffed and golden.

Leave it for 5 minutes to cool down then drizzle the olive oil and two drops (or three maximum) of balsamic vinegar and it’s ready to serve! Alone or with a salad it tastes just delish! If you are not fan of balsamic vinegar you can skip and it will still taste amazing.

I used rocket leaves for garnish, you can also use thyme or any other green leaves you fancy and it’s at hand. Bon appetit!

Sup up your sandwich 5 – Boursin cheese,spinach and strawberry

Many of you find no time to cook dinner after long days at work, with kids or simply not fan of cooking. Sandwiches come to rescue the situation and satisfy your cravings; You can sup up any simple sandwich to become a consistent delicious meal. Not just that, it’s a pleasure to the eye also with all these colors blend.

Today’s sandwich in the makeover series, could serve you for breakfast as well; it is packed with nutrients and rich in compounds such as fibers (spinach), omega 3 fats (walnut), antioxidants (olive oil) and vitamins.

Did you know that the anthocyanin in the strawberry boost the short term memory by 100% in eight weeks? I think i will be hooked on strawberries for the next eight weeks!

To make this super sandwich you will need:

  • Viennoise bread, or any type you favor
  • Boursin cheese (nature)
  • handful spinach baby leaves (6-7)
  • green leaf lettuce (2-3)
  • 4-5 walnuts
  • 2-3 strawberry sliced
  • 1 tbsp olive oil

Olive oil supplementation was found to positively affect the thickness of bones. It helps in the absorption of calcium in your body. I love how we Lebanese, and specifically our moms, do things by nature, like adding olive oil to a Labneh sandwich without having this knowledge. And many others examples that makes me feel proud of our healthy cuisine… Back to our sandwich, drizzling the olive oil on your Boursin cheese will help you benefit from the calcium in it and add a delicious taste.

If you are not fan of Boursin cheese, try it with goat or cottage cheese, they can both give you this pleasure! You will love this flavorful and fresh sandwich.

Turkey and red fruits jam with brie dip

Cold weather is the perfect excuse for eating, especially comfort food that warms the body and the heart. At the end of the day and when kids go to bed, all i want is to relax on the couch, enjoy a nice dinner with hubby while watching tv.

By this time i am out of energy, i need a quick dinner served with no preparations. Turkey, red fruits jam, brie and basil olive oil… did i grab your attention? All you need is 5 minutes of preparations, and this is exactly the time you spend to make a sandwich.

How to do?

  • Roll out a ready puff pastry into 2 circles (almost 8″ or 20cm).
  • Place the first circle of dough onto a parchment-lined baking sheet.
  • Brush the surface lightly with red fruits jam leaving the center, the size of your brie cheese.
  • place the cheese in the center and lay around turkey slices, i chose turkey with herbs, my favorite.
  • place the second circle on top, after cutting off the circle, the size of the cheese.
  • divide the dough into 16 equal parts, starting from the edge till the center, without touching the cheese.
  • twist each two parts in different directions to meet. Take each pair of twisted slices and press the ends together firmly to seal the dough.
  • brush the surface with olive oil
  • make several cuts in the cheese to not burst in the oven
  • sprinkle some basil
  • bake on 180°C for 15-20 minutes or until the surface is golden brown
