Smoked salmon and asparagus quiche – Hello Spring!

smoked salmon and asparagus quiche | marmite et ponpon

Checking the seasonal produce guide, spring (and precisely march) is the best season for fresh asparagus. Asparagus, ranging from pencil-thin to very thick, comes in; colossal, jumbo, large, standard, and small. Can be green, white or purple. Varieties are interchangeable in recipes, with the only change being in the color of the resultant dish.

Celebrating spring arrival, today i am using baby green asparagus with smoked salmon for my beautiful and delicious quiche:

Quoting my self from a previous post, quiche is a glorious meal at any time of the day, starting from breakfast to dinner. Served hot, cold or room temperature and packed with rich flavorful ingredients from veggies to meats and heaps of cheeses, bathing in a custard of eggs and cream. Baked in the most buttery and flaky crust, could be bought ready made or if you wish for a homemade one, like i do, check marmite et ponpon recipe along with some advises to get the best pâte brisée ever!

The most important, it doesn’t require too much preparation and whichever you choose to make it’s always a hit. Smoked salmon and asparagus quiche requires (for a 9″or 22cm dish):

  • one medium onion finely diced
  • 2 tbsp olive oil
  • 1 1/2 cup heavy cream
  • 3 large eggs
  • 1 cup mozzarella cheese
  • salt to taste
  • 200g smoked salmon cut in medium to large pieces
  • bunch of baby asparagus, almost 200g enough to create a flower like shape on top

Cook onion with olive oil until fragrant and not brown. Set aside. In a bowl mix cream, eggs and cheese then add the cooked onion. Pour the whole mix in the precooked pie (for 20 minutes in 180°C oven, to ensure a crisp and flaky texture). Distribute the salmon pieces evenly then create a flower shape with the asparagus.

Bake in the oven 180°C, for almost 30 minutes or until golden and the edges are set but it still wobbles a little in the center for a creamy and silky texture.

Many of you find no time to cook dinner after long days at work, with kids or simply not fan of cooking. Sandwiches come to rescue the situation and satisfy your cravings; You can sup up any simple sandwich to become a consistent delicious meal. Not just that, it’s a pleasure to the eye also with all these colors blend.

Did you know that the anthocyanin in the strawberry boost the short term memory by 100% in eight weeks? I think i will be hooked on strawberries for the next eight weeks!

To make this super sandwich you will need:

  • Viennoise bread, or any type you favor
  • Boursin cheese (nature)
  • handful spinach baby leaves (6-7)
  • green leaf lettuce (2-3)
  • 4-5 walnuts
  • 2-3 strawberry sliced
  • 1 tbsp olive oil

Olive oil supplementation was found to positively affect the thickness of bones. It helps in the absorption of calcium in your body. I love how we Lebanese, and specifically our moms, do things by nature, like adding olive oil to a Labneh sandwich without having this knowledge. And many others examples that makes me feel proud of our healthy cuisine… Back to our sandwich, drizzling the olive oil on your Boursin cheese will help you benefit from the calcium in it and add a delicious taste.

Hearty shepherd pie

shepherd-piemarmite-et-ponpon

In a previous post, i shared the recipe of batata soufflé, explaining that is the lebanese variation of the french dish “hachis parmentier” and the british dish “shepherd pie”.

Et voila the shepherd pie, a great comfort food recipe that’s easy to make!  For Lebanese people or to the one who knows the traditional lebanese dishes, you will notice that it’s a mix of “batata soufflé” and “bazella w riz” but instead of the rice it’s served with potato purée on top.

This recipe is so versatile, some add cheese or herbs and some add more veggies, gravy or broth. For marmite et ponpon recipe you will need: (serving 4-6 people)

  • 2 medium onion, medium diced
  • 1/4 cup celery and leek, finely chopped
  • 2 tbsp olive oil
  • 250g minced beef
  • 1 1/2 tbsp tomato paste
  • 2 large carrots coarsely chopped
  • 1 cup water
  • 1 cup or almost 250g peas (frozen or canned)
  • salt to taste
  • 1 kg mashed potato (purée style with milk and butter)
  • dry mint to sprinkle on top
  • 1 cup grated parmesan

Cook onion, celery and leek with olive oil until tender and fragrant. Add mince beef and cook together until the meet is browned. Stir in tomato paste, carrots and  water then simmer for 20 minutes. I you are using frozen peas, add them to simmer for another 10-15 minutes but if you are putting the canned ones, you only need to simmer for another 2-3 minutes as they are already cooked and you don’t want them to melt in.

Pour them in a baking dish to cover with the mashed potato. Sprinkle some dried mint (almost 1 tsp) and grated parmesan and bake on 180°C for 15 minutes or until cheese is melt and golden.

How to do?

how-to-do-turkey-and-red-fruits-with-brie-dip

  • Roll out a ready puff pastry into 2 circles (almost 8″ or 20cm).
  • Place the first circle of dough onto a parchment-lined baking sheet.
  • Brush the surface lightly with red fruits jam leaving the center, the size of your brie cheese.
  • place the cheese in the center and lay around turkey slices, i chose turkey with herbs, my favorite.
  • place the second circle on top, after cutting off the circle, the size of the cheese.
  • divide the dough into 16 equal parts, starting from the edge till the center, without touching the cheese.
  • twist each two parts in different directions to meet. Take each pair of twisted slices and press the ends together firmly to seal the dough.
  • brush the surface with olive oil
  • make several cuts in the cheese to not burst in the oven
  • sprinkle some basil
  • bake on 180°C for 15-20 minutes or until the surface is golden brown

How to host a Raclette party at home

raclette

Raclette is a type of cow milk cheese, consumed in Switzerland and France. It’s commonly used for melting in small pans known as coupelles that are placed under a specialized grill looking like an electric table-top grill. Then the slices of melted raclette are poured over veggies, pickles, charcuterie and meat. Served with wine to seal the deal!

racletteraclette

Throwing a raclette party at home is the most fun thing. Tomorrow is new year, and with kids outing became a bit difficult; We are hosting at home a raclette concept party.

Not going so much traditional, we are not just melting raclette, we got gruyere, mozzarella, gouda and brie. You can use any cheese of your choice that melts. As for the side ingredients with the cheese, you can go as much creative as you want; go for anything that pairs well with your choice of cheese.

raclette

My favorite raclette ingredients that i am serving :

  • Veggies (fingerling potatoes, sliced courgettes, sliced aubergines, sliced mushrooms, asparagus spears, broccoli florets, sliced capsicum, onion rondelles and cherry tomatoes). You can precook them if you want to save time.
  • Fruits (melon, strawberry and grapes)
  • Pickles (cornichons, pearl onions, jalapenos and olives) you can add to this list anything pickled that you fancy
  • Meat (strips of beef, bresaola, salami)
  • Condiments (salt, pepper, basil, rosemary and oregano)
  • Nuts (walnut), the crunch of nuts is a tasty contrast to the creaminess of cheese.

raclette

You can simply pour the melted cheese over these ingredients or include baguette slices.

If you want to end your dinner with a dessert, melt chocolate and marshmallows to satisfy your sweet tooth. With fruits you can take it to the next level.

raclette

Hopefully this post was beneficial to you whether it’s your first time to have a raclette or you are already a connoisseur. Enjoy it, nothing says happiness more than cheese 🙂

racletteracletteracletteWith this post and being the 7th most viral blog for 2015 (in lebanon), i wrap up this year, wishing you a beautiful new one ahead full of blessings, joy, good health and new exciting events in your life.
