Spinach, leek and cheddar cheese quiche with tips for successful baking

❤ QUICHE ❤ , this glorious meal at any time of the day, starting from breakfast to dinner. Served hot, cold or room temperature and packed with rich flavorful ingredients from veggies to meats and heaps of cheeses, bathing in a custard of eggs and cream. Baked in the most buttery and flaky crust, could be bought ready made or if you wish for a homemade one, like i do, check marmite et ponpon recipe along with some advises to get the best pâte brisée ever!

The most important, it doesn’t require too much preparation and whichever you choose to make it’s always a hit.

Spinach, leek and cheddar cheese quiche. For a 9″ (22cm) quiche you will need:

  • 3/4 cup leek, or one large stalk chopped coarsely
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 cup chopped spinach (baby leaves fresh or thawed if frozen)
  • 1 1/2 cup heavy cream
  • 3 large eggs (or 4 medium)
  • 1 cup cheddar cheese
  • salt to taste

Cook leek, spinach and garlic powder with olive oil until fragrant. Set aside to mix with cream, eggs and cheese. Pour in a precooked pie (for 20 minutes in 180°C oven), to ensure a crisp and flaky texture. Bake in the oven for almost 30 minutes or until golden brown.

The best quiche consists of the perfect ratio between eggs and milk. Using too many eggs results in a rubbery and firm quiche. Not using enough eggs will prevent the filling from setting. Remember 1 large egg to 1/2 cup of dairy. That’s why in this quiche i used 3 eggs fro 1 1/2 cup of cream.

If you are adding fillings like vegetables, make sure they are as dry as possible. For instance, if you are using thawed spinach, squeeze them to get out as much as you can from its remaining water.

For a perfectly cooked quiche, bake it until the edges are set, but it still wobbles a little in the center (for a creamy and silky texture). It will take 30 to 40 minutes in a 180°C oven.

Turkey and red fruits jam with brie dip

Cold weather is the perfect excuse for eating, especially comfort food that warms the body and the heart. At the end of the day and when kids go to bed, all i want is to relax on the couch, enjoy a nice dinner with hubby while watching tv.

By this time i am out of energy, i need a quick dinner served with no preparations. Turkey, red fruits jam, brie and basil olive oil… did i grab your attention? All you need is 5 minutes of preparations, and this is exactly the time you spend to make a sandwich.

How to do?

  • Roll out a ready puff pastry into 2 circles (almost 8″ or 20cm).
  • Place the first circle of dough onto a parchment-lined baking sheet.
  • Brush the surface lightly with red fruits jam leaving the center, the size of your brie cheese.
  • place the cheese in the center and lay around turkey slices, i chose turkey with herbs, my favorite.
  • place the second circle on top, after cutting off the circle, the size of the cheese.
  • divide the dough into 16 equal parts, starting from the edge till the center, without touching the cheese.
  • twist each two parts in different directions to meet. Take each pair of twisted slices and press the ends together firmly to seal the dough.
  • brush the surface with olive oil
  • make several cuts in the cheese to not burst in the oven
  • sprinkle some basil
  • bake on 180°C for 15-20 minutes or until the surface is golden brown

Strawberry jam crumble tart


strawberry jam crumble tartAre you craving a sweet treat that is unfussy? Try this delicious crumble tart with any jam flavor you fancy and reap a bounty of flavors in no time!

It’s been a hektic week, juggling hundred tasks, between work and home, especially we are moving to a new flat. I wanted to prepare something sweet but very easy and effortless. Right now, i am savoring one piece of this strawberry crumble tart while writing this post.

Share with me this pleasure, head to your kitchen right away to prepare this delectable tart, I am sure you have all the ingredients:

  • 2 1/2 cup flour sifted
  • 200g butter cold and cubed
  • 1/2 cup confectioner sugar
  • 1 egg
  • 1 tbsp vanilla
  • 300g jam (flavor of your choice)

Mix all together until it just starts to come together. You need a crumble like dough not a solid ball of dough.

Preheat you oven 200°C. Take 3/4 of the dough and roll it in your pan (10 inches) with a half cm thickness. Bake for 10 minutes before taking out to spread the jam on top of it. Use any jam you favor, i chose strawberry for this time.

Crumble the rest of the dough over the jam and bake again for another 10 minutes.

Let it cool before serving. Personally i like it at room temperature and also cold from the fridge. It’s one of the treats light in efforts but rich in flavors just bake and slice!

la miche de Nana

Miche or country bread, is typically a large round loaf made from either natural leavening or bakers yeast. Most traditional versions of this bread are made with a combination of white flour, water, leavening and salt.

La miche de nana (Nadra my mother in law) is the sweet version of this traditional bread, tastes like brioche and even more delicious!

Spending time with the family, cooking together, chatting and laughing is a treasure! Preparing this miche was so fun over 3 stages to get this golden braid!

It’s a very simple recipe made with love. The secret is patience. For 4 braids of 35cm each you need:

  • 1 1/2 cup butter melted
  • 1 1/2 cup sugar
  • 1 1/2 cup milk
  • 4 eggs
  • 1 tsp vanilla
  • 1 tsp yeast
  • 1 tsp baking powder
  • pinch of mahaleb (aka St Lucie cherry or prunus mahaleb)
  • flour to knead the dough

Mix butter and sugar. Add milk, eggs, vanilla, yeast, baking powder and mahaleb. Add flour little by little and knead the dough until it’s not sticky anymore. Let it rest for at least 6 hours, or overnight for a better leavened dough.

Divide it into four parts and each part to three equal parts to make the braids. You can always reduce the recipe in half if you don’t want to make the whole quantity. But trust me it’s so delicious you will regret not to!

Again you have to keep it to rest for ten hours before baking. That’s why i said patience is the key to a successful miche.

Brush the surface with egg yolk and bake for 20-25 minutes on 200ºC.

The irresistible aroma filling the house will kill your patience. I am sure  you will not let it cool to try your first piece that will drag many more!

You can shape it other than braids, for instance teta prepared these small parts for nady! He was so excited and participating in the whole process!

15 minutes nutellissimo brownies!

This easy and fast recipe will make you stand up on your feet now and go to the kitchen to prepare these inviting nutella banana brownies. Am sure you will find the ingredients home:

  • nutella jar (350g)
  • 3 eggs
  • 15 tbsp flour
  • 2 medium bananas

For the ganache:

  • 200g dark chocolate
  • 200g heavy cream

Mix nutella, eggs and flour and bake in a greased pan for 10 minutes, in the middle rack (180ºC). I used a square pan (18x18cm)

Let it cool before laying the banana slices on top and cover it with the chocolate ganache.

How we make chocolate ganache:

Put 200g of dark chocolate into a large heatproof bowl (must first be chopped into small pieces so that it will melt evenly). Bring 250 ml of cream just to a boil over medium-high heat or put for 3 mns in microwave; pour over chocolate. Let stand 10 minutes.

Stir the mixture very gently, incorporating the cream steadily, without overworking. The mixture should begin to appear glossy.

Let it cool for 20 mns in the fridge before using it.

For a beautiful presentation, decorate the top with edible flowers. I am taking advantage of being in lebanon where i find flowers at my ease.

Personally i find banana pairing beautifully with nutella, but if you are not fond of banana you can replace it with strawberry or pineapple. It tastes also wonderful

These beautiful red flowers created an attractive contrast! Fruits and flowers work like magic. The more colors you have on your plate, the more inviting your dish can be. It’s not a secret that we eat with our eyes first!

Brownies are best served with a perfect round ice cream scoop as Salma, my sister in law says! She is right 🙂
