Smoked salmon and crab sandwich

An utterly craveable sandwich, for a NO cook day, doesn’t require skills and the best part it’s ready in less than 10 mns. So if you feel like treating yourself effortlessly, enjoy this elegant sandwich.

To make 2 sandwiches you will need:

  • 6 slices of bread (could be toasted)
  • 150g thin slices smoked salmon
  • 100g imitation crab meat, shredded
  • 1 medium avocado pitted and mashed
  • 1 1/2 tbsp lemon juice
  • 1 tbsp capers
  • 1 1/2 tbsp cream cheese
  • 3-4 roman lettuce leaves

Start by spreading on the first layer of bread the mashed avocado and lemon, then a layer of the shredded crab. Cover with a second layer of bread, spread cream cheese, lay thin slices of smoked salmon, a layer of lettuce and sprinkle some capers. Top it with the third layer of bread and serve.

You can use toasted bread or simply sliced from the loaf. Personally i like it toasted, if you do then you need to let it cool before making the sandwich, if the bread is hot, it might change the taste of the ingredients.

If you like onion, you can add couple of rondelles, or maybe substitute lettuce with rocket leaves. It’s a versatile sandwich, you can add whatever you like to pair with crab and salmon.

I am sure only by looking at the pictures your mouth is already watering. Wait until you try it, you will fall for it.

Easy peasy nibble – spinach feta in puff pastry dough

spinach puff pastry A tasty nibble, so easy to prepare. It’s a quick favorite that takes a lot of compliments whenever we have people over lunch or dinner.

Puff pastry dough is one of the staples kept in my freezer. Whenever i need a last minute savory snack, this ready made dough comes to rescue me. Thaw it in the refrigerator for 4 hours or so and it will be soft enough to use. This rich flaky pastry makes a simple snack into a real treat.

Spinach and feta pair successfully, to prepare this stuffing you need:

  • 400g spinach chopped (you can use it frozen)
  • 150g feta cheese
  • 1 onion diced thinly
  • 2 tbsp olive oil
  • juice of one lemon
  • salt to taste.

In a pot, cook the onion with olive oil until tender and fragrant. Add spinach and cook with the onion on a medium to low heat, usually i add 1/4 cup of water, it’s enough with the water that spinach releases.

Cook until done about 15 minutes, turn of the heat then add lemon juice and mix. Cut the feta cheese in cubes, add it to the spinach and mix them together until well incorporated. Eventually the cheese will melt. Feta is a salty cheese you might not need to add salt, it’s a matter of taste.

Bring to room temperature before stuffing the puff pastry. This quantity makes around 20 if you are using the puff pastry dough cut in 10×10 cm sheets. Here is a self explanatory step by step picture.

spinach fetta fatayerWhen you place them in the pan, brush the top with eggs before baking in the oven (180°C) for 15-20 minutes or until the dough is puffed and the top is golden.

15 minutes nutellissimo brownies!

This easy and fast recipe will make you stand up on your feet now and go to the kitchen to prepare these inviting nutella banana brownies. Am sure you will find the ingredients home:

  • nutella jar (350g)
  • 3 eggs
  • 15 tbsp flour
  • 2 medium bananas

For the ganache:

  • 200g dark chocolate
  • 200g heavy cream

Mix nutella, eggs and flour and bake in a greased pan for 10 minutes, in the middle rack (180ºC). I used a square pan (18x18cm)

Let it cool before laying the banana slices on top and cover it with the chocolate ganache.

How we make chocolate ganache:

Put 200g of dark chocolate into a large heatproof bowl (must first be chopped into small pieces so that it will melt evenly). Bring 250 ml of cream just to a boil over medium-high heat or put for 3 mns in microwave; pour over chocolate. Let stand 10 minutes.

Stir the mixture very gently, incorporating the cream steadily, without overworking. The mixture should begin to appear glossy.

Let it cool for 20 mns in the fridge before using it.

For a beautiful presentation, decorate the top with edible flowers. I am taking advantage of being in lebanon where i find flowers at my ease.

Personally i find banana pairing beautifully with nutella, but if you are not fond of banana you can replace it with strawberry or pineapple. It tastes also wonderful

Yesterday, I baked this beautiful cake at my in laws, they are chocolate lovers, and here is the proof!

Am sure this cake will not live longer than couple of hours if you are nutella lovers. Sahtein 🙂



sfouf – a lebanese toothsome delicacy (a healthy egg free cake)


Sfouf is one of the traditional lebanese sweets. Considered as the eggless cake. Super delicious recipe to be noted:


  • 2 1/4 cups semolina flour
  • 3/4 cup flour
  • 1 1/2 cup sugar
  • 1 cup corn oil
  • 2 tbsp powdered milk
  • 1 tbsp baking powder
  • 1 tsp turmeric powder
  • 1 1/2 cup water


Very simple and easy! Combine semolina flour, flour, sugar, powdered milk, baking powder and sieved turmeric. Mix well together and add the oil then water.

Pour batter into greased pan, sprinkle with pine seeds and walnuts.

Bake for 35-40 mns, until the skewer comes out clean.

The best companion of coffee or tea and a healthy homemade dessert for your kids!

Turmeric comes from the root of the Curcuma longa plant, is a powerful medicine that has long been used in the Chinese and Indian systems of medicine as an anti-inflammatory agent to treat a wide variety of conditions, including flatulence, jaundice, menstrual difficulties, bloody urine, toothache, bruises, chest pain, and colic.

roast hamourCooking becomes different when you have a baby. He becomes the priority and your life is all about him. It’s friday (the weekend in Doha) the day we eat lunch as a family. I woke up thinking what to cook something healthy, fast and my boys like it. Plus it’s the lent and we don’t eat meat on fridays. So i decided to make roast fish with vegetables, lemon and walnut.


  • A whole fish, i chose hamour about 1kg
  • 3 medium potatoes
  • 4 carrots
  • 3 big garlic cloves
  • walnuts (as much as you like)
  • 200g  coriander
  • olive oil
  • salt
  • 2 lemons

Chop the walnuts, garlic and coriander for the stuffing.


Make diagonal cuts on both sides to put inside from the stuffing to give it a richer aroma.


Stuff the fish and insert lemon slices.

Cut the carrots and potatoes and put them on the sides.

sprinkle the salt and olive oil and it’s ready to be baked for 25 mns.
