Veggie spaghetti with shrimps in olives and tomato sauce

Oh to those Back to school mixed feelings! Speaking my mind, i don’t know who is being  more anxious; me or my kids! I guess i am more nervous. Thinking of them how they will face school related issues (as new teachers, meeting new friends or missing old ones, fitting in, being away from me…..) sparks a upswing in inquietude for me. But thank God seeing them coping easily every year and being happy kids vanish all these exaggerated (only in my head) feelings of unease! Welcome to moms world!

Today after dropping off my 4 year old boy, i head directly to my kitchen to do what i mostly like to do. I wanted to keep my mind busy and stop it from creating scenarios until i pick him up. (Please read the message at the end of the post)

Joud loves spaghetti, shrimps and prefers red sauce than white. So let’s go for this veggie spaghetti with shrimps in red sauce!

When i saw this type of wholesome spaghetti, felt like i found a hidden gem. Made of 25% puree from real zucchini and spinach!

Cook as per pack instructions, drain and leave aside.

Cook 500g of shrimps, peel, devein and keep aside to prepare this easy and delicious sauce:

  • 1 medium onion finely diced
  • 1 garlic clove minced
  • 1 tbs celery chopped
  • 2 cups of tomato puree
  • 2 tbsp olive oil
  • a handful black or green olive pitted
  • salt to taste

Cook onion, garlic and celery in the olive oil until fragrant and translucent

Add tomato puree and cook all together until it starts boiling then add the olive and shrimps to cook all together for 5 minutes.

small tricks to revamp your classic spaghetti bolognese

Spaghetti bolognese is a classic. Very simple recipe with no much ingredients. But small tricks transform it to a delicious dish for the whole family including toddlers.

Ingredients for 4 people:

  • 300g ground beef
  • one large chopped onion
  • two big chopped garlic clove
  • puree of 2 medium tomatoes
  • 1 tsp cognac
  • 1 tsp sugar

Tutorial:

spaghetti bolognese tutorialIn a casserole pan on a medium heat add a splash of olive oil and cook the onion and garlic with a dash of salt, only for 5 minutes before adding the ground beef.

When the meat starts to brown add the tomato puree with a cup of water.

When it starts to boil add the cognac and sugar. Don’t worry about alcohol for your kids, cooking will take it away.

Cook for 15 minutes on medium flame, then serve it on a bed of spaghetti.

Sprinkle over a little parmesan for a deeper flavour!

orzo, spinach and chicken salad


orzo, chicken and spinach saladCraving a dinner that is delicious, nutritious, and simple to make?

This salad is a full meal. It contains all the nutrients you need at one time.

The first time i tried this salad was in an italian restaurant. I loved it and decided to do it at home, and the result came tastier!

Ingredients (for 4 people)

  • orzo pasta 500g
  • grilled chicken breast 400g
  • fresh spinach 350g (chopped)
  • feta cheese 80g (cut in small cubes)
  • 2 medium tomatoes (cut in medium cubes)
  • olives 50g
  • roasted pine seeds (a handful)

Dressing: lemon and olive oil

Why lemon? because there’s a compound in spinach called oxalic acid, which blocks the absorption of calcium and iron. An easy way to solve this problem is to pair spinach with a food high in vitamin C.

breakfast mouseNothing is worth the look on your baby’s face when he sees this breakfast! it’s friday meaning it’s the weekend in Qatar. No work, no nursery let’s have fun. It’s breakfast time.

It’s a smart way to let your baby eat his breakfast if you find difficulties. In the same time he learns the colors and shapes.

All you need is to buy a flower shape cutter and I am sure the rest is available at home.

IMG_8392Use the cutter to prepare the carrots for the flowers. You can cut tomatoes and cucumbers as well, choose the vegetables your baby like.

IMG_8394– Cucumber peels for the flower stem and the mouse tail.

– Lemon slice for the sun shape

– Cut a triangle out of your baby’s favourite cheese.

– Two slices of the cucumber for the mouse ears.

– Cut the end of the olive for the nose and two small pieces for the eyes.
