Veggie spaghetti with shrimps in olives and tomato sauce

Oh to those Back to school mixed feelings! Speaking my mind, i don’t know who is being  more anxious; me or my kids! I guess i am more nervous. Thinking of them how they will face school related issues (as new teachers, meeting new friends or missing old ones, fitting in, being away from me…..) sparks a upswing in inquietude for me. But thank God seeing them coping easily every year and being happy kids vanish all these exaggerated (only in my head) feelings of unease! Welcome to moms world!

Today after dropping off my 4 year old boy, i head directly to my kitchen to do what i mostly like to do. I wanted to keep my mind busy and stop it from creating scenarios until i pick him up. (Please read the message at the end of the post)

Joud loves spaghetti, shrimps and prefers red sauce than white. So let’s go for this veggie spaghetti with shrimps in red sauce!

When i saw this type of wholesome spaghetti, felt like i found a hidden gem. Made of 25% puree from real zucchini and spinach!

Cook as per pack instructions, drain and leave aside.

Cook 500g of shrimps, peel, devein and keep aside to prepare this easy and delicious sauce:

  • 1 medium onion finely diced
  • 1 garlic clove minced
  • 1 tbs celery chopped
  • 2 cups of tomato puree
  • 2 tbsp olive oil
  • a handful black or green olive pitted
  • salt to taste

Cook onion, garlic and celery in the olive oil until fragrant and translucent

Add tomato puree and cook all together until it starts boiling then add the olive and shrimps to cook all together for 5 minutes.

Sup up your sandwich 4 – Italian sub

Many of you find no time to cook dinner after long days at work, with kids or simply not fan of cooking. Sandwiches come to rescue the situation and satisfy your cravings; You can sup up any simple sandwich to become a consistent delicious meal. Not just that, it’s a pleasure to the eye also with all these colors blend.

All you need is the right and a smarter choice of pairing your sandwich ingredients. Today’s fourth option of sandwich makeover is Italian sub.

  • Italian bread (or sub bread)
  • Swiss cheese slices
  • Salami, i chose the one with cracked peppers
  • Turkey breast slices, i chose it smoked with herbs
  • Lettuce, green leaf type
  • Tomato slices
  • Pickles (cornichon)
  • Onion
  • Mayo – ketchup sauce

To build up your sandwich start by

  • a layer of Swiss cheese, i used emmental slices, heat it in the oven to melt (optional)
  • then a layer of turkey, as i mentioned above, i used the smoked one with herbs
  • followed by salami, i like the one that comes with cracked pepper,
  • onion, cut them rondelles shape
  • lettuce, i used the green leaf one
  • tomato slices, you can take a bit of its juice and seeds if you find it a lot juicy
  • and pickles, homemade cornichons prepared by my mum
  • Finally mix 1 tbsp of mayo with 1/2 tbsp of ketchup to spread it on the top layer of the bread to seal the deal.

You can serve it immediately or warm it a bit in the oven if you like the bread a bit crispy. With a side salad it makes a nice meal.

I am sure this sandwich is going to be on your to do list, it’s one of my favorite full of flavors awe sub. You can make your own, adding black olives, green peppers or removing onion if they aren’t your thing! Feel free to add or omit as per your taste.

orzo, spinach and chicken salad


orzo, chicken and spinach saladCraving a dinner that is delicious, nutritious, and simple to make?

This salad is a full meal. It contains all the nutrients you need at one time.

The first time i tried this salad was in an italian restaurant. I loved it and decided to do it at home, and the result came tastier!

Ingredients (for 4 people)

  • orzo pasta 500g
  • grilled chicken breast 400g
  • fresh spinach 350g (chopped)
  • feta cheese 80g (cut in small cubes)
  • 2 medium tomatoes (cut in medium cubes)
  • olives 50g
  • roasted pine seeds (a handful)

Dressing: lemon and olive oil

Why lemon? because there’s a compound in spinach called oxalic acid, which blocks the absorption of calcium and iron. An easy way to solve this problem is to pair spinach with a food high in vitamin C.
