Shrimp basil linguine

Shrimp basil linguine is an ultimate comfort food packed with a symphony of flavors. Whether you like to cook or no, i must say it’s a foolproof recipe, so inviting to hit the kitchen and give it a try. Easy and quick, trust me!

Serving 4, you will need:

  • 800g shrimps cooked and deveined
  • one medium onion finely diced
  • 2 garlic cloves minced or 1 tsp garlic salt
  • 2 tbsp butter
  • 10-15 cherry tomato
  • a bunch of fresh basil
  • 500 ml heavy cream
  • salt to taste
  • linguine cooked as per pack instructions (enough quantity to serve 4)

Cook the shrimp (boil or oven bake), devein and put it aside.

Cook linguine pasta as per pack instructions, drain and put aside.

In a sauce pan, cook onion and garlic in butter until translucent and fragrant. Add tomato and keep sauteeing for 5 mns, then the basil to cook for another 5 mns. Salt is added as per taste. Finally pour the cream and simmer for 10 mns over low heat.

Serve it on a bed of linguine and enjoy an absolute yummy dish!

For garnish, as you see in the pictures i sprinkled a bit of chives. if you are not a fan of, you can skip this step and it won’t affect the outcome. Isn’t it easy and quick? Try it and give me your suggestions. Bon appetit!

Caprese quiche

This luscious caprese quiche is always a hit! A crazy delicious filling in a flaky homemade crust that will make you fall in love with quiches. Get ready to hit the kitchen as soon as you see this post.

To bake a 12″ (30cm) quiche you will need:

  • 2 large eggs (or 3 regular)
  • 200 ml cream
  • 200g shredded mozzarella
  • 1 cup coarsely chopped basil (plus a handful basil leaves for garnish)
  • 1 tsp salt
  • 2 cups cherry tomatoes (around 20 pieces cut in halves)
  • 200g fresh mozzarella

Roll out the dough and bake for 15 minutes.

Mix eggs, cream, shredded mozzarella, basil and salt and pour over the dough. Place tomatoes and fresh mozzarella evenly and bake for 45 minutes. Take out and garnish with basil leaves.

Very easy for such beauty, isn’t it? Plus you can’t go wrong with this unapologetically rich and festive quiche. Serve it for any meal of the day and i am sure you will get hooked on it. Each bite is packed with all the flavors depth. Paired with a salad, makes a satisfying supper on its own.

La salade niçoise


Salade NiçoiseAfter two long hektic weeks, moving to a new house, i am back if you are wondering where i’ve been!

My first post from my new kitchen, eagerly presenting the french “salade Niçoise”, in the style of Nice, France.

Traditionally made with hard boiled eggs, boiled potatoes, olives, green beans, tuna, anchovies, tomato and onion presented on a bed of lettuce. Some sources exclude anchovies, add artichoke hearts or even presented without lettuce.

Salade NiçoiseTo serve 4 people you will need:

  • 3 canned tuna drained and flaked
  • 4 hard boiled eggs quartered
  • 8 small potato boiled and quartered
  • 12 cherry tomato halved
  • 150 g green beans steamed
  • around 24 black olives pitted
  • 1 big onion cut rondelles
  • 1 head romaine lettuce chopped into bite size pieces

Mix all together drizzle with vinaigrette or lemon olive oil dressing and serve!

Salade NiçoiseUsually this salad is served as an entree, but with some french baguette or croutons it can be a wholesome and sustaining dinner.

Appetizers are meant to stimulate your appetite! The more attractive they look, the more inviting they are. Embellish your simple cheese appetizer and let beauty be on your plate.

Mix feta cheese with dried thyme or italian herbs then shape them into balls. On a cracker (i used ritz) place a small frisé lettuce then the ball of cheese. Halve a cherry tomato and place it on top.

Tomates – cerises (cherry tomato) salad

As promised, here is an adaptation of the tomates cerises salad that i first tasted at la maison de la foret in “tawlet bkassine” restaurant www.tawletbkassine.com

So delicious, couldn’t get enough of it. We need:

  • 300g cherry tomato cut in halves
  • two small shallot or white onion cut a la julienne. For more information of which type of onion to use click onion guide
  • handful of mint leaves
  • handful of basil leaves
  • handful pine seeds roasted
  • handful dried raisin soaked in water for 15 mns at least

Mix all with a dash of salt and olive oil drizzle. If you are a fan of lemon you can add one tbsp as well.
