mouth watering kousa mehche (stuffed zucchini)


Who said traditional lebanese dishes can’t be presented in a modern creative way?

Mehche kousa or stuffed zucchini is one of the delicious traditional dishes that all lebanese families cook at least twice a month. Kids as adults love it. So succulent that people never bothered themselves to think of the esthetic presentation on the table .

Personally it’s one of my favourite dishes and i want to take it to the next level, by showing you how the presentation can be equivalent to the taste.

Isn’t mouth watering?

Usually kousa mehche is accompanied with wara’ arich or stuffed vine leaves to make the dish a killer.

Recipe:

  • 1 kg kousa
  • 200g ground beef
  • 1 cup rice
  • 2 medium tomatoes chopped
  • tomato paste
  • salt & pepper to taste

First you need to empty out the zucchini pulp with a special corer. Carve it as much as you can but try not to break it šŸ™‚

Mix together the meat, rice, salt and pepper to stuff the zucchini to 3/4 full. The same stuffing is used also for the vine leaves.

Put the zucchini in the pot vertically, open side to the top so the rice will not go in the sauce. Add the chopped tomatoes, the paste and salt to taste then cover with water.

Bring it to boil then reduce to medium low flame and cook for 45 mns approx.

roast hamourCooking becomes different when you have a baby. He becomes the priority and your life is all about him. It’s friday (the weekend in Doha) the day we eat lunch as a family. I woke up thinking what to cook something healthy, fast and my boys like it. Plus it’s the lent and we don’t eat meat on fridays. So i decided to make roast fish with vegetables, lemon and walnut.

Ingredients:

  • A whole fish, i chose hamour about 1kg
  • 3 medium potatoes
  • 4 carrots
  • 3 big garlic cloves
  • walnuts (as much as you like)
  • 200gĀ  coriander
  • olive oil
  • salt
  • 2 lemons

Chop the walnuts, garlic and coriander for the stuffing.

Make diagonal cuts on both sides to put inside from the stuffing to give it a richer aroma.

Stuff the fish and insert lemon slices.

Cut the carrots and potatoes and put them on the sides.

sprinkle the salt and olive oil and it’s ready to be baked for 25 mns.

linguine alla scampi


The season of lent began today. It is a season of penance, reflection, and fasting which prepares us for Christ’s Resurrection on Easter Sunday. Some people abstain from eating meat (but salt and freshwater species of fish, amphibians, reptiles and shellfish are permitted), so I will be posting some yummy meals to help.

Linguine alla scampi is a 30 mns preparation meal and it’s so delicious

Ingredients: (for 2 people)

  • 350g shrimps
  • 250g linguine n11
  • 1 medium tomato
  • 2 garlic clove
  • chopped coriander
  • salt
  • chilli oil
  • garlic oil

Method:

–Ā Ā Ā Ā Ā Ā  boil the shrimps, peel and devein them

–Ā Ā Ā Ā Ā Ā Ā  in a pan put together the chopped tomatoes, crushed garlic and coriander for 5 minutes and add the shrimps, chilli oil , garlic oil and salt for another 5 mins. And your mix is ready to pour on the linguine.
