Maakroun معكرون – St barbara traditional lebanese sweet


lebanese ma3krounDecember 4, Christians celebrate St Barbara. The great martyr Barbara, as known in the church was a christian saint and martyr. Barbara won particular fame for the horrifying fact that her death sentence by beheading was carried out by her own father, a wealthy pagan who had first isolated her in a tower and then denounced her to the Roman authorities when she became a Christian.

وُلدت القدّيسة بربارة في بعلبك. كان أبوها ديوسقورُس غنيٌّا ووثنيٌّا متعصّبًا. فأَحسن تربيتها بالعلوم والآداب. واستقدم لها أشهر المعلّمين ومن بينهم فالنتيانُس الذي أخذ يشرح لها أسرار الديانة المسيحيّة. شعر والدها بميلها إلى الإيمان المسيحيّ فسجنها في برجٍ حصين، وأقام من حولها تماثيل الأصنام لتعبدها. أمّا هي فظلّت تتلقّى التعاليم المسيحيّة من خلف الجدران على يد فالنتيانُس. وراحت تمارس الصلاة والصوم والتأمّل. ثمّ طلبت من خدّامها أن يحطّموا التماثيل الموضوعة في البرج. علم أبوها بالأمر فغضب وأوسعها شتمًا وضربًا وألقى بها في قبو مظلم. وفي اليوم التالي، استحضرها أمام الوالي مركيانُس علّها تخاف وتعود إلى عبادة الآلهة. فأمر بجلدها، فتمزّق جسدها وتفجّرت دماؤها وهي صابرة صامتة مسلّمة أمرها للّه. وفي الليل ظهر المسيح لها وشفى جراحها. وفي صباح اليوم التالي، استقدمها الوالي ورآها معافاة فقال لها: «إنّ الآلهة شفقت عليك وشفتك». فأجابته: «هو المسيح يسوع الذي شفاني، وهو سيّد الحياة والموت». فأمر بجلدها ثانية ثمّ بقطع رأسها فنالت إكليل الشهادة سنة 235

One of the Lebanese traditions on that day, is making sweets such as atayef (dough stuffed with cream or nuts), maakroun (flour and semolina fried cookies bathed in sugar syrup) , zlebyeh (fried dough with sugar or honey) and ameh (boiled wheat).

I will share with you the healthiest version of maakroun, baked.

To prepare maakroun you need:

  • 2 cups flour
  • 1 cup fine semolina (thin ferkha as known in lebanon)
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/4 tsp mahaleb (optional)
  • 1/2 cup vegetable oil
  • 3/4 cup water
  • 1 tbsp anise

For the sugar syrup:

  • 2 cups sugar
  • 1 cup water
  • 1 tsp orange blossom water
  • 1 tbsp lemon juice

Usually i start by preparing the sugar syrup, because i need them to be at room temperature when i want to soak in the maakroun.

In a pan let the sugar melt in the water on a medium heat. Then add the lemon juice and bring down to low heat for 10 minutes until it thickens. Turn off the heat then add the orange blossom water. Put aside to become room temperature.

To prepare the maakroun, mix flour, semolina, sugar, baking powder mahaleb, anise and oil. Then add the water slowly and knead the dough to the desired consistency and let it rest for half an hour.

There is another way also, my mum’s, she boils the water and anise and let it cool. She mix all dry ingredients and she knead the dough with the anise water.

how to do maakrounDivide the dough in small to medium balls (depending how big you like it to be), roll each ball on a grater to get the texture above in the picture. Some people like to deep fry it in oil but for a lighter and healthier result i bake it for 20 mns on 180°C.  Start checking on the minute 15 as you don’t want them to become hard but soft crunchy.

Soak it in the sugar syrup for 15 minutes then take it out and satisfy your sweet tooth. 3a2bel kel seneh!

Warning! Addictive Christmas shortbread cookies


christmas shortbread cookiesA melt in your mouth Christmas shortbread cookies, as festive as flavorful, are to be considered on  your to bake list for this season. You would love to close your eyes when eating to involve all your senses.

christmas shortbread cookieWhenever i want to make a no fail recipe and be sure the taste will be as good as the picture, i go back to my small notebook where i keep my mom’s recipes. Every time i bake these shortbread cookies i get more and more certain it’s the best recipe.

christmas shortbread.cookiesThis quantity yields 12-30 cookies (depending on how big you cut them out)

  • 200g butter
  • 2 1/2 cups flour sifted
  • 2 eggs
  • 1 cup confectioners sugar
  • 1 tsp vanilla

Combine all together and knead until the dough is smooth. No need to let it chill as we use cold butter. But don’t hesitate to put it in the fridge if it gets too soft while working.

You will need a set of different sizes of star shape cookies cutter to be able to make the levels of the tree from big to small.

Preheat oven to 180ºC. Line your baking pan with parchment paper and bake the cookies for 10-12 minutes. Keep on checking, when the edges start to turn to golden, it’s time to remove, you don’t want them to get brown.

christmas.shortbread cookiesLet them cool completely. To stack them, start the base with the biggest star to end up with the smallest. Dust with powdered sugar and serve! The best is to be served with a cup of tea or coffee.

Handmade Christmas tree ornaments- crafts for tiny hands


handmade christmas tree ornamentsChristmas is my favorite holiday; so joyful, festive and special for what it represents. When you say Christmas you immediately think of the decorated trees, shopping for gifts, lights, beautiful decorations, happy family gatherings, jingle bells, yummy food, midnight mass, visiting friends and family, kids waiting for Santa… and by the way my husband proposed to me on the Christmas eve! I always thought it can’t get better until my love Nady was born, he became the Christmas and the joy of the family! I admit that kids take Christmas to another level of feelings to discover that happiness is a small word to what you actually feel. He changed the whole concept and added more magic and excitement to this season. This year, we are decorating the house together, and specifically the tree. Handmade ornaments with salt dough!  I love when he is involved in the crafts, it’s a quality and fun time together! With just flour, salt and water you can do these beautiful ornaments! Mix:

  • 1 cup flour
  • 1/2 cup salt
  • 1/2 cup water

and knead until smooth. If your dough is still crumbly you can add more water, or if it’s sticky you can add flour, you can always correct flour and water to get the consistency you want. Add coloring gel to the dough or paint it later if your kids are old enough to create designs on them. I love working with this dough, it’s so versatile; you can bake it for 15-20 mns on 200ºC or leave it to air dry for 2 days, if you are using decorations that can’t be baked. If you are leaving it to air dry i suggest to flip it after one day. For instance, we used colorful plastic pieces to decorate the tree shape ornament, and kept it to dry without baking. handmade tree ornament 2Nady was so happy rolling the dough, cutting, and poking the colored plastic bits. So pretty to eat – elegant apple rose tart


apple rose tartApple rose tart are perfect for an elegant dessert and so easy to do. This was more of a technique than a recipe, that’s why i created a step by step unmistakable  scheme.

First you need to have:

  • one big red apple
  • 1 tbsp honey
  • 2 tbsp sugar
  • 3 tbsp water
  • 1 cup flour sifted
  • 50g butter

how to do apple rose tart– Wash and cut the apple in half. Remove the core and slice each half  (2-3mm thickness for each slice). Put the slices in a pot and add the honey, sugar and water. Cook for 5 minutes on a medium heat. Take out the slices to cool, but don’t get rid of the syrup, we will use them in the dough.

– To prepare the dough, mix the flour, butter and 4 tbsp of the syrup. knead until the dough becomes smooth. Roll out and cut in strips of 2.5 cm width and 25 cm length.

– Place on each strip 5-6 slices of the cooked apple, and roll it up. It will make around 8 small tarts, you can easily double the recipe if you want more.

– Bake in the oven (180°C) for 15-18 minutes. Take it out, brush with honey and serve! If you are a cinnamon lover you can also sprinkle some on top with the honey.

With few ingredients always available at home, you can make this elegant dessert. They were so tempting that i was eating them in my mind while preparing them.

loubyeh bi zeit – vegan flat green beans


loubyeh bzeitloubyeh bi zeit (loubyeh = green beans, bi zeit = vegan) is a typical lebanese dish. Presented at room temperature as mezze or warm as a main dish accompanied by lebanese bread. It’s one of the wholesome dishes without the aid of the meat. Beans are a healthy option as they are very low in calories, high in fiber and great antioxidants. Usually this dish is prepared with fresh flat green beans.

loubyeh khadraThis rich and deep flavored dish is done with few ingredients. Beside the green beans the rest is considered from the essentials of the levantine and specifically lebanese cuisine. You need:

  • 1 kg flat green beans, wash and trimmed from both ends and cut in half if they are too long.
  • 400g peeled and diced tomato
  • 3 medium onion diced roughly
  • 5 garlic cloves crushed (plus one whole garlic bulb)
  • 3 tbsp olive oil
  • 1 1/2 cup water
  • salt to taste

how to do

Cook the onion and garlic in olive oil until tender and fragrant then add the diced tomatoes. If you like the deep taste of tomato you can add one tbsp of tomato paste, it will give the savory flavor.

Cook for only one minute before adding the green beans and water. Do not forget to put the garlic bulb if you are garlic lovers, the cloves will end up tasting as if caramelized. For me loubyeh bi zeit served by my mother and grandmother comes always with this beautiful bulb (sometimes more than one). Actually i don’t know if i really like it but i always eat it without thinking! It’s like a tradition. But I am sure i like how it looks in the plate 🙂

When it starts to boil bring the heat to low, cover the pot and let it simmer for 20 mns. Remove the lid and turn up the heat to medium high. Let the liquid evaporate and then saute the vegetables until the tomatoes form a thick coating around the beans (about 10 minutes).

Serve it at room temperature or warm as you desire. Eat like a lebanese and try it with raw onion and lebanese bread!
