a traditional lebanese dish, kibbeh bil sanyeh (meat kibbeh in a flat oven dish)


kibbeh bil sanyeh aka flat kibbeh baked in the oven, others call it sandwich kibbeh where ground meat and pine nuts are pressed between two layers of very fine minced beef with bulgur. One of the most popular dishes in lebanon. I can rarely find someone who doesn’t love kibbeh. Everytime i want to invite friends over lunch, they request kibbeh bil sanyeh. What a delicious dish!

Some of non middle easterners only knows the football shape kibbeh, the most served in lebanese restaurants. Let me tell you it’s more than that; there is various ways to cook kibbeh and this flat kibbeh baked in a deep dish is another way. It can also be served raw with fresh mint leaves, olive oil and onion!

Today i am posting the flat one, baked in the oven.

15 inch dish serves 6 to 8 people, for that you need:

For the two layers kibbeh dough:

  • 800g finely minced beef
  • 4 cups bulgur
  • 2 tbsp salt

For the stuffing:

  • 400g ground beef
  • 3 medium onions
  • 80g pine seeds
  • 1/4 cup olive oil
  • 1tsp salt
  • 1/2 tsp sweet pepper

First you start by preparing the stuffing:

Bring the olive oil to heat,  add the onion and fry until tender and fragrant.

Add the ground beef and cook until brown then add the pine seeds, salt and pepper and keep cooking until well done. Turn off the heat and keep it aside to prepare the dough.

soak the bulgur in water to become soft (about 10 minutes), then drain and add to the fine minced beef with salt and work it with your hands until it becomes consistent like a dough.

Divide the dough in half. Grease the dish with vegetable oil, take one part and start spreading it evenly in the dish. When it’s all spread, the thickness is approx 8mm.

Bring the stuffing and spread it on the first layer.

Get the second part of the dough to cover the stuffing. Always wet your hands to even out the outer dough.

Now the fun part of it! Decorating the upper part. Use a knife to divide it in 4 equal parts, design each part differently. This is how mum makes it.

Preheat your oven to 220ºC.

Drizzle 1/2 cup of vegetable oil all over the kibbeh and put it in the oven for 35 minutes, until it’s golden brown.

When you cut a wedge of this kibbeh bil sanyeh you see its whole thickness is of maximum 2cm.

This is the traditional way to cut the kibbeh. Serving it as wedges like pieces of cake. But i like to cut it in square shape as well.

Kibbeh bil sanyeh can be served with a cabbage salad or minted yogurt with cucumber dip.

Among the World’s Healthiest vegetables, spinach comes out at the top of the ranking list for nutrient richness;  vitamins and minerals. Eat spinach to protect yourself against inflammatory problems, oxidative stress-related problems, cardiovascular problems, bone problems, and cancer.

We all know that Popeye made himself super strong by eating spinach.

I remember when we were kids, we used to call it popeye food, we never even called it spinach! We loved this dish and we were convinced whenever we had it for lunch we get super powers!

So while spinach probably won’t make you super strong the minute you eat it, as it did for Popeye, it will promote your health and vitality in many other ways. It seems like Popeye was pretty smart after all.

Spinach with rice is one of the traditional lebanese food. To prepare this super dish  you need: (serving 4 persons)

  • 1 kg spinach chopped
  • 250g minced beef
  • 1 big onion chopped
  • 2 tbsp olive oil
  • 1 tbsp salt
  • juice of 2 lemons
  • handful pine nuts (about 30g)
  • 1 cup of water

Bring olive oil to heat and cook the onions until tender and fragrant. Add the minced beef and cook until brown then add the pine nuts and cook until it’s all well done.

Stir in the chopped spinach, you can use them fresh or frozen, with one cup of water. When they start boiling, bring the heat to low, cover the pot and simmer for 20-25 minutes. Put the heat off and add the salt and lemon and serve it with rice.

There’s a compound in spinach called oxalic acid, which blocks the absorption of calcium and iron. An easy way to solve this problem is to pair spinach with a food high in vitamin C, that’s why lemon is a necessity to benefit from this recipe.

zucchini omelette – eejjit kousa عجة كوسى – suitable for vegetarians


zucchini omeletteOmelette is a simple and quick breakfast, lunch or dinner. Eggs can be served at any time of the day and it is always satisfying.

Take your basic recipe to the next level by adding vegetables to it. You can be as much creative as you wish. All vegetables go well with eggs.

if you’re one of those people who like combinations, here is below a nice way to eat omelette.

Recipe for 4 people:

Crack 10 eggs into a mixing bowl, add salt and pepper and beat well with a fork.

Chop one large onion, fresh mint and a bunch of parsley, then grate 4 large zucchini and add to the eggs.

To have a consistent batter add 8 tbsp of flour and mix well.

Grease your dish with a bit of olive oil, pour the mix and bake in the oven until the omelette firms up.

What a fluffy and filling meal on the days when you don’t wish to eat meat!

 

 

how to cook a delicious bemyé bzet – okra (bamia)- suitable for vegetarians


okra dishOkra is a very critical vegetable. It’s either you like it or you hate it.

Okra is a very healthy food due to its high fiber, Vitamin C and folate content. it’s also known for being antioxidant and a good source of calcium and potassium.

This simple recipe will make you change your mind if you think you will never like okra, and for those who know how delicious okra is already enjoy the meal!

It’s suitable for vegetarian people and who don’t eat meat on fridays* (lent)

Ingredients: (for 4 people)

  • 1kg okra
  • 2 large tomatoes diced
  • 1 large chopped onion
  • 5 garlic cloves
  • one bunch of chopped coriander
  • salt to taste
  • 1 tbsp olive oil
  • juice of one lemon

Start by frying the onion and garlic with 1 tbsp of oil, only for 3 minutes on high flame then add the tomatoes and coriander. Cover with 2 cups of water as below

When it just start to boil add the okra and cook for 20 to 30 mns. You should taste to see the doneness of the okra.

Once it’s cooked, remove from heat, add the lemon juice and salt to taste.

You can serve it hot as you can serve it cold as a mezze.

finger – licking lebanese taboule as it should be done


When you type “taboule” in the search engine, you get endless recipes, some don’t even resemble the original one.

This recipe is the traditional lebanese taboule as it should be done!

Ingredients:

  • 4 medium bunch of parsley
  • 2 medium tomatoes
  • 1 small fine chopped onion
  • juice of 2 lemons
  • 1/2 cup of olive oil
  • 1 tbsp of chopped mint
  • 1 tsp salt
  • 1/2 tsp sweet pepper
  • 2 tbsp bulgur (aka burghul)
  • lemon zest

Method:

Gather the parsley in small bouquets, easier to be chopped. Choose the tomatoes half ripe and cut in medium cubes

These parsley were sent to me overseas from lebanon, thanks to my father, knowing that i love taboule.

Add the mint, onion, salt and pepper to taste, lemon, olive oil and burghul.

Soak the burghul in room temperature water for 5 mns before adding them.

the lemon zest is not a main ingredient but it gives the zing flavor (mom astuce).

Mix all together and taste. You can always add salt or lemon depending on how sour you like it to be. Taboule is the healthiest salad ever. Some have it as an entree and others as a main dish since it’s a complete meal full of nutrients.

I like to eat taboule with lettuce, cabbage, vine leaves and even bread!
