Crème caramel

Crème caramel or Crème renversée or even flan custard, they are different names for this succulent dessert. I always thought it’s very difficult and tricky to make it until today, i promise you it’s so easy and prepared in less than 20 minutes.

The secret of success of this caramel dessert is in using bio eggs and both milk and cream to get this very smooth and silky texture.

It consists of two parts of preparation. First the caramel and then the creme.

Heat 1 1/2 cup of sugar on a medium heat and in a non stick pan until the sugar gets brown and gradually melt to turn into golden caramel. it will take about 5-7 minutes.

Pour the caramel into a baking dish and distribute it evenly in the dish until it covers all the parts by tilting it in circular moves. Put aside to prepare the creme.

  • 4 tbsp sugar
  • 6 large eggs bio
  • dash of salt
  • zest of half lemon (3/4 tsp almost)
  • 1 1/2 tbsp cognac or whiskey of a good quality
  • 3 cups milk
  • 1 cup heavy cream

Whisk sugar and eggs, gently so you don’t get bubbles, then add salt, zest and cognac (or whiskey) and mix them until combined. Finally add milk and cream and mix well again gently to avoid bubbles which won’t give the smooth texture later when baking.

If you get bubbles you can get rid of them by sieving the mixture before pouring it in the prepared baking dish. Cover it with aluminum foil and make small holes in it. Bake it bain marie style on 200°C for almost an hour or 70 minutes. Start checking on it after 50 minutes. Insert a wooden skewer, it should comes out clean.

For those who doesn’t know bain marie technique (water bath or double boiler), it consists of bathing your baking dish in another wider dish containing boiling water. The water covers the outside of your baking dish to half. This technique is meant to evenly cook something, gently and gradually.

Let the crème caramel cool down, then turn it upside down on a plate, not too shallow because you will have caramel liquid coming out.

Better served after chilled in the fridge for at least 5 hours!

If you wish to serve it as individual portions you can pour the creme evenly in small ramekins.

A lip smacking beef stroganoff


beef stroganoffWhat a flavorsome savory dish that will grace your table and leave you with enjoyment and comfort. So quick that can be prepared by the time of boiling your tagliatelle. I can promise to soothe your hunger in less than 30 minutes!

It’s a classic russian dish with many variations. My recipe calls for:

  • 500g lean beef strips
  • 1 big onion finely diced
  • 100g butter
  • 2 tbsp flour
  • 1 1/2 cup beef broth (or water)
  • 1 tbsp mustard
  • 1/3 cup wine
  • 200g mushroom
  • 1/2 cup heavy cream
  • salt to taste

In a large skillet over medium heat, melt the butter and cook the onions slowly until tender (3-4 minutes) , then add the beef strips and  brown (3-5 minutes) stirring constantly. Sift in the flour and cook for another 2 minutes. Pour in the broth (or water) along with the mustard and wine. Let it simmer together for 10 minutes. Finally add the mushroom and cream to cook for 5 minutes all together.

beef stroganoffServe on a bed of tagliatelle or rice. Some people likes it with roasted potatoes too. Sprinkle with chives or parsley and wow your family/guests. I promise you lots of murmuring between them and a another visit sooner than you think.

Having baby Joud with long nights deprived of sleep and living the experience of brotherhood and first year of school for Nady make us need this type of comfort food. I can say at this stage and where we live, good food is the enjoyment for my husband and I.

Best Artichoke Spinach dip


IMG_5008This best ever homemade artichoke spinach dip. It is a huge hit appetizer, merits a standing ovation from your guests.

It’s a pinnacle appetizer for my husband and I, we order it almost at every diner restaurant until the day i made it home. Since then my husband craves this symphony of well blended flavors.

To make this creamy dip you need:

  • 250g spinach chopped (thawed if frozen)
  • 400g artichoke hearts drained and chopped
  • 250ml heavy cream
  • 100g cream cheese
  • 2 cups Emmental cheese (divided)
  • 1 big onion finely diced
  • 2 garlic cloves minced
  • salt to taste

In a pot cook the onion and garlic with the spinach for 3-4 minutes. Put the heat off and mix in the artichoke, cream, cream cheese, salt and one cup of the Emmental cheese. You can use mozzarella if you wish a milder taste.

Pour the mix in a baking dish, sprinkle over the remaining cup of cheese and bake on 200°C in the oven for 30 mins or until it’s bubbly and the cheese is golden brown.

Savoury chicken crêpes with creamy mushroom sauce


IMG_2309These elegant crêpes stuffed with grilled chicken are all you need to indulge in a tender creamy dream. You can make the basic crêpes ahead of time to make this dish served in less than 30 minutes.

To make the batter for these blondies  you need: (Nigella lawson recipe)

  • 1 cup flour
  • 1 1/3 cup milk
  • 1 egg
  • 2 tbsp melted butter

Place the batter in the refrigerator for half an hour before using. This allows the bubbles to subside so they will be less likely to tear during cooking. This batter can stay up to 48h in the fridge. Recipe yields 6x (20cm) crêpes.

  • 500g chicken breasts cut in medium stripes
  • 150g mushroom sliced
  • 1 medium onion chopped finely
  • 1 tbsp butter
  • 1/2 cup white wine (optional)
  • 500ml heavy cream
  • salt to taste
  • emmental cheese for garnish

In a sauce pan, on a medium heat cook the onion and mushroom with the butter until tender and fragrant. Add the chicken and cook until well done for about 7 minutes then add the cream and wine (optional). When the first bubble starts to form, put heat to low and simmer uncovered for 5 minutes or until the sauce starts to thicken.

Remove from heat and let it cool to room temperature before stuffing the crêpes to prevent from tearing. Don’t put too much of the sauce inside the crêpes, they won’t stay as firm.

Savoury chicken crêpes with creamy mushroom sauceThis quantity is enough for the 6 crêpes. Lay them in the baking dish, drizzle the remaining sauce on top and sprinkle over the cheese to bake in the oven (180°C) for 10-12 minutes.

When the craving arises for a luscious creamy shrimp tagliatelle


Everyone needs a delicious pasta recipe, served in less than 30 minutes, and this shrimp tagliatelle is sure to be a favorite!

For this lovely treat (serving 4 people) you will need:

  • 500g fettucine
  • 800g shrimps peeled and deveined
  • 1 cup of cream
  • 3 cups of milk
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 2 tbsp flour
  • salt and pepper to taste
  • parmesan cheese for garnish

In a large saucepan of boiling salted water, cook pasta until al dente (as per packet instructions).

Meantime grill the prawns and set aside.

In a non stick skillet, combine milk, cream, flour and cook on a medium high until it starts to get thick then bring heat to low, add the butter and garlic powder. Keep stirring until viscous.

Toss in the shrimps and allow to simmer for 3 minutes before pouring over the pasta.

Shaving over a little parmesan before serving, goes really well with it.
