Cool off doha heat! A healthy refreshing homemade dessert! Suitable for kids! 100% natural! Low in calories!…. and i can keep listing many other reasons… Just to say there’s always an excuse to have a popsicle in my mind, am a big fan of popsicles!

Doha summer is already here and the temperature is getting higher and higher to the 40°C and above. Nothing will refresh you like a fruity popsicle.

I would like to share with you my recipes for fresh fruits popsicles and give a piece of my happiness to popsicoholic people like me 🙂

Popsicoholic part1: strawberry flavor

homemade fresh strawberry popsicles

For these delicious popsicles you need to:

  • In a food processor puree one cup of fresh strawberries with 1 tbsp of sugar.
  • whisk 1 cup of yogurt and 2 tbsp of sugar

Pour in a mold, alternating between the strawberry puree and the yogurt, make about 3-4 layers. With a skewer or thin-bladed knife, swirl mixtures together in an up-and-down motion. Insert ice-pop sticks and freeze until solid.

You should get 5 to 6 popsicles depending on your mold size. You can freeze up to one week, (but i doubt if they will last more than couple of hours).

To remove the popsicles from the molds, run under warm water until they are easily released. Enjoy!

irresistible sablé aux abricots

sable aux abricotsSablé (a french word meaning sand), is a shortbread biscuit. It’s called “sablé” because of the sandy texture you get when you rub the butter, flour and sugar together before adding the eggs.

These delicious sablés are filled with homemade apricot jam and flavoured with lemon zest. Simply irresistible!

They are so tempting that am sure you’re going to the kitchen the minute you finish reading the ingredients.

Ingredients:

  • 3 cups flour
  • 3/4 cup sugar
  • 250g butter
  • 2 whole eggs
  • 2 tbsp powdered milk
  • 1 tsp vanilla
  • zest of one lemon

Method:

Mix butter, flour and sugar, and rub them until they become like sand. Add the eggs one by one then powdered milk, vanilla and lemon zest. Mix well until you get a consistent dough. I recommend to put it for half an hour in the fridge before shaping the rounds (5mm thickness). Don’t forget to make equal number of rounds with a hole in the middle for the upper part. Place them on a parchment paper and bake for 15-20 mns on 175°C.

P.S: For the people who don’t have the cutters, they can use a glass cup to cut the big circles and the cap of a bottle of water to make the hole on the upper one.

When they cool down to room temperature fill them with any jam of your preference, i used apricot jam that my mom made, then sprinkle icing sugar (or powdered sugar) on the top.

Baked with love brioche:

  • 500 g flour
  • 80 g melted butter
  • 2 eggs
  • 1 tsp salt
  • 250 ml warm milk
  • 1 tbsp icing sugar
  • 1 tbsp yeast
  • 1 egg for glaze

Mix yeast, icing sugar and warm milk and keep it aside for 10 mns.

Then add eggs, butter and salt and mix well, then the flour.

Leave it to rest for 1 hour until it doubles in size than divide it into 8 parts.

brioche

The dough is really sticky, so better grease your fingers with a bit of oil before rolling the dough.

Place it on parchment paper and again leave it for an hour to double in size.

Glaze the top with egg and bake for 16 to18 mns on 180ºC until risen and golden brown.

brioche

Allow to cool before offering to your child.

So delicious! Thank you teta Ado.
