how to make quick, easy and delicious coconut balls


A pleasure to the palate of coconut lovers. Originally comes from Balkan, it’s a traditional dessert in Croatia.

You find so many recipes, but this one is simply the best!

Ingredients:

  • 11/2 cup coconut flour
  • 200g butter
  • 2 cups sugar
  • 1 cup water
  • 1 tbsp vanilla
  • 2 cups powdered milk

Method:

Combine water, butter and sugar and bring to boil. Put it aside and add the powdered milk, vanilla and 1 cup of the coconut. Mix well until they become consistent. Shape into balls, rolling them on the remaining coconut flour. Meanwhile turn on your oven on 175°C. When the balls are ready, place them on parchment paper, and bake on middle shelf for only 10 minutes just to have a light golden color on the surface.

Eat one and you can never stop!

Who said traditional lebanese dishes can’t be presented in a modern creative way?

Mehche kousa or stuffed zucchini is one of the delicious traditional dishes that all lebanese families cook at least twice a month. Kids as adults love it. So succulent that people never bothered themselves to think of the esthetic presentation on the table .

Personally it’s one of my favourite dishes and i want to take it to the next level, by showing you how the presentation can be equivalent to the taste.

Isn’t mouth watering?

Usually kousa mehche is accompanied with wara’ arich or stuffed vine leaves to make the dish a killer.

Recipe:

  • 1 kg kousa
  • 200g ground beef
  • 1 cup rice
  • 2 medium tomatoes chopped
  • tomato paste
  • salt & pepper to taste

First you need to empty out the zucchini pulp with a special corer. Carve it as much as you can but try not to break it 🙂

Mix together the meat, rice, salt and pepper to stuff the zucchini to 3/4 full. The same stuffing is used also for the vine leaves.

Put the zucchini in the pot vertically, open side to the top so the rice will not go in the sauce. Add the chopped tomatoes, the paste and salt to taste then cover with water.

Bring it to boil then reduce to medium low flame and cook for 45 mns approx.

My mom is the queen of kousa mehche, she taught me!

NO bake oreo choco pop


popYou can’t beat chocolate! Especially these choco pops.

It’s a pleasure for the palate, simply the best!

  • No bake
  • 3 ingredients
  • super easy

Roughly crush 6 packs (24 pieces) of oreo, add 3 tbsp of cream cheese (i use philadelphia cheese), 3 tbsp of nutella and mix until u get a consistent batter.

Let it rest for half an hour in the fridge, take it out and shape it into balls and dip it in melted dark chocolate.

creative easter eggs – bunnies, carrots and chicks


Coloring eggs should be fun when you have kids. Just normal dyeing is not enough to impress my boy. we need creative ideas? and that’s how it started…

Bunnies, carrots and chicks and let the fun begin!

Dye the eggs with orange to make the carrots.

Then cut papers from different shades of green (to look realistic) as medium thin strips to make the carrots stems. I used wax gun to stick them.

And the carrots are ready.

Now we want bunnies to eat those carrots. No need to color the eggs, white is perfect. Cut out two big and two small ovals for the ears.

The nose is a small pompom bought ready made (for people in qatar you can buy it from daiso). Draw eyes and moustache with a black marker.

And the family bunnies found the carrots!

Adding chicks made the whole thing so cool. 3 easy steps to follow:

  • color blue eggs
  • stick yellow triangle for the nose
  • 2 black dots for the eyes

Then i realized there should be a male chick! Small rectangular cuts on a red paper and the comb is done!

I like the egg carton color, so why not use it for the decoration?!

Final outcome! Brilliant! Am sure adults as kids will love this.Can you feel the spring? Am sure now you’re all excited for easter 🙂

banana cakeI am sure if you have kids, means you always have a lot of bananas at home!

Bananas get ripe quickly especially in Doha it’s too hot! Whenever I see some getting too ripe I use them for cake. I tried too many recipes and this one came out the best. Why? because it’s not too sweet, it allows me to use chocolate. I love to pair bananas with chocolate! This cake is a pleasure to make!

Ingredients:

  • 200g flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 100g toasted walnut
  • 5-6 bananas (500g)
  • 125g butter
  • 125g brown sugar
  • 2 eggs
  • a pinch of salt

Toast the walnut in the oven for 5 mins and keep aside to cool while preparing the batter.

Cream the butter and the sugar in a processor or by hand then add the eggs one by one. Chop the walnut medium size and add it with the mashed bananas to the batter, usually I mash them with a fork when too ripe.

Mix well and start to sift in the flour, baking powder, baking soda, cinnamon and salt. Mix everything together until you have a nice smooth batter.

Preheat the oven to 170°C and bake for almost an hour in the middle shelf. Test the cake by poking a skewer into the middle, if the skewer comes out clean, it means your cake is ready.

It’s up to you if you want to add chocolate syrup. I melt 200 g of dark chocolate with 1 tsp of vanilla in a bowl and that’s it.

Now the fun part for my baby is when i prepare for him the banana skewers to eat with the cake. it’s a nice way to decorate the cake and please your kids.
