The best homemade mushroom soup


mushroom soupI heart soups, especially the homemade ones, where you can indulge in a flavorful one without feeling any guilt. This soup is so rich in flavors and low in calories. It is super easy to make plus it takes less than 30 minutes to be ready.

  • 500g mushroom sliced
  • 1 medium onion finely diced
  • 50g butter
  • 2 tbsp flour
  • 4 1/2 cup vegetable broth (less fat, less salt)
  • salt and pepper to taste

Melt the butter in a casserole and cook the onions until fragrant and tender, about 2-3 minutes. Add the mushroom and cook about 5 minutes. Sprinkle the flour over while still cooking for another 2 minutes. Pour the broth and mix. When u see the first bubble forming, reduce the heat to low and simmer for 20 minutes.

Puree in a blender and serve. You can keep aside some mushroom slices if you like chunks in your soup.

mushroom soupmushroom soupIf you wish to have a creamier version of this soup, you can add one cup of heavy cream 2 minutes before turning off the heat. You can still enjoy a low calorie soup if you choose low fat cream. Personally i prefer it without cream, i like to enjoy the exclusive taste of mushroom.

Christmas candle holder -DIY- crafts for tiny hands


christmas candle holder - DIYChristmas decoration fiesta is still going on. My little Lutin is so excited and counting down to the big day D. Meantime we are enjoying crafting some decorations to add our personal touch in every corner in the house.

I really loved working with the baking soda dough that we explored this year. Last week we did the keepsake ornaments and the result was amazing, so we decided to use it again for candle holders. For a reminder to the dough recipe, click here.

christmas candle holder - DIYCut out star shapes and while the dough is still soft, mark the place of the tea candle before baking. When it’s totally dry and cool, hand it to your little helper and watch the lovely golden fingers coloring them. Red, green and golden are the dominant colors in our house for this season.

After the paint is perfectly dry, place the tea candles. We used vanilla scented ones because we are planning to light them the Christmas eve at the dinner.

If you are doing this with your little girls, add glitter on the paint they will love it. Little details make the difference. Always give options to your kids to develop their creativity.

Christmas delights: dark chocolate whiskey truffles


dark chocolate & whiskey truffleChristmas comes once a year with lots of yummy treats, it’s the season of 10452 calories. Who cares?! Forget about counting calories and indulge in these heavenly treasures, i promise you they are addictive!

Treat yourself with these exquisite dark chocolate truffles with a hint of whiskey.   cv, fTreat yourself this Christmas with these exquisite dark chocolate truffles with a hint of whiskey. hggYou will need:

  • 500g dark chocolate (cut in small pieces)
  • 1/3 cup heavy cream
  • 2 tbsp butter
  • 1/3 cup whiskey
  • dash of salt
  • unsweetened cocoa powder for rolling

Combine chocolate, cream and butter in a microwave safe bowl. Heat in 20 seconds intervals, stirring between each.When the chocolate is completely melted and the mixture is smooth and glossy stir in the whiskey and salt and combine. Refrigerate for at least 3 hours before shaping the truffle into your desired size of balls. Roll them on a bed of cocoa powder and store them in a sealed container in the refrigerator.

You can also roll them on chocolate sprinkles or take it to the next level by rolling them on red or green vermicelli to have Christmas colors.

Christmas keepsake ornaments – homemade recipe


Christmas keepsake ornamentsKids will love doing this, seeing their handprint and footprint turning into Santa and Rudolph.

Last year we handmade our christmas tree decoration using a homemade salt dough, and it was absolutely fun. This year i learned another recipe of dough made with baking soda and cornstarch. It’s much better than the salt dough and it’s really white that makes it easier to color.

You will need:

  • 1 cup cornstarch (cornflour)
  • 2 cups baking soda
  • 1 1/2 cup water

Mix all ingredients in a saucepan and bring to medium heat. Whisk continually  until it starts to thicken. It will take couple of minutes to look like mashed potato in consistency, remove it immediately from the heat. Place it in a bowl and cover it with damp cloth until it’s cool.

Knead it on a smooth surface, adding cornstarch if it feels a bit sticky and let the fun begin!

christmas keepsake ornamentsCut two big circles and print your kid’s hand or foot. Make a hole with a straw to add a ribbon later to hang it on the Christmas tree. Transfer the shapes on a baking sheet and put them for an hour in a 70°C preheated oven.

Take them out, make sure they are completely cool before your kids start coloring them.

christmas keepsake ornamentsWe turned Nady’s handprint into Santa and Joud’s footprint into Rudolph. Don’t forget to add the name and date, it will be a precious and memorable keepsake over years.

Nady colored 2 golden stars to add them to the ornaments before inserting the ribbons.

Adding fun to the traditional seeds planting on St. Barbara


Lebanese traditions say; people plant wheat on St Barbara day as an act of sympathy with St Barbara who was hidden in a wheat field while running away from her father. Nowadays we don’t just plant wheat, we do lentils, chickpeas or whatever grain that grows nicely taking advantage of it to decorate later the Nativity.

With kids everything we do should be fun and attractive or they loose interest. To make this tradition more entertaining, i added to the cups where we planted the lentils, pictures for Nady and Joud’s face. Cut it on top exactly at the beginning of the hair to make the lentils stems look like hair.

And it was a good lesson on how we plant grains in cotton. Follow the images tutorial to see how we did it.

You will need cups, use the shortest possible so you won’t need to fill in with a lot of cotton. Make some holes in the cup to let extra water come out. Soak well the cottons in water before sprinkling the seeds. Don’t put them under the sunlight directly, in a shaded place where they are exposed indirectly to light.

I couldn’t find wheat to plant it so i only used lentils. But if you find wheat they will look much closer to hair.
