Today it’s our 3rd wedding anniversary and it coincides with the post number 100 for marmite et ponpon.

Booze cake sounds a brilliant idea! Of course not any booze but Antoun’s favorite: Whiskey! And to jazz it up i decided to coat it with caramel whiskey sauce! A real pleasure to the palate!

You might be wondering what’s this drawing underneath! Well Nady must add his touch as well. I used one of his big drawing as a runner on the table. I found it a bright idea to let him participate in our surprise to papa.

To do this irresistible cake you will need:

  • 2 cups all purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder, sifted
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 tsp vanilla
  • 3/4 cup warm water
  • 1/4 cup whiskey of good quality

Preheat oven to 180°C. In a large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt.

Add eggs, milk, oil and vanilla. Whisk on medium speed until the ingredients are well incorporated then add the water and booze.

Pour in greased and floured pan (12 cups) and bake for 45-50 minutes or until a wood pick comes out clean.

Let it rest before removing from pan. Meantine you can prepare the caramel sauce.

  • 1 cup sugar
  • 1/4 cup water
  • 2/3 cup heavy cream
  • 1 tbsp butter
  • 1 1/2 tbsp whiskey

Place sugar on medium heat. Pour water and bring to boil. Cover and cook for 2-3 minutes until all sugar crystals are dissolved. Remove cover and continue to boil until sugar becomes golden brown.

remove from heat and stir in the butter and cream and return to low heat, whisking until all smooth. Remove from heat and let it cool for couple of minutes before adding the whiskey. bring it to room temperature and allow it to thicken a bit yet still pourable.

Now it’s ready to pour over the cake!

dainty orange chocolate cake, you will dream about it!

Finally I have my own creation cake recipe. I always wanted so. Few trials, and finally i have a successful 100% jay’s recipe: chocolate orange cake.

The challenge was to create an egg, milk and butter free cake recipe:

  • 1 1/2 cup all purpose flour
  • 1 cup sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp instant coffee
  • 1 tsp vanilla
  • 1/2 cup vegetable oil
  • 1 tbsp white vinegar
  • 1/2 cup water
  • 1 cup orange juice
  • 3 tbsp orange zest

Sieve flour and cocoa powder. Mix with sugar, baking soda, salt, instant coffee and orange zest.

Make a well in the center and add oil, vanilla, white vinegar, water and orange juice. MIx well together and pour in a greased 11¨ pan.

Bake in the middle rack of the oven (180ºC) for 40 mns or until a skewer comes out clean. Start checking from 25 mns onwards.

Cool for 30 mns before inverting onto a wire rack.

Make sure the cake is completely cool before pouring the chocolate ganache over the cake.

Quick reminder of how we make chocolate ganache:

Put 200g of dark chocolate into a large heatproof bowl (must first be chopped into small pieces so that it will melt evenly). Bring 250 ml of cream just to a boil over medium-high heat or put for 3 mns in microwave; pour over chocolate. Let stand 10 minutes.

Stir the mixture very gently, incorporating the cream steadily, without overworking. The mixture should begin to appear glossy.

Let it cool for 20 mns in the fridge before using it.

Choosing to do this fabulous cake today was for a reason. Tomorrow  am going to Lebanon for the summer vacation. I wanted to prepare for my hubby his favorite cake, orange chocolate as a compensation gesture for leaving him alone in Doha .

Knowing that It’s my first time to bake this cake and i am so happy and proud to have my own creation recipe.

The chocolate and orange aroma was filling the house! i was cutting the oranges to decorate the top of the cake when Antoun arrived and couldn’t resist the smell.

He was so impatient, he barely gave me 5 minutes to take some pictures before he had the first piece in like 10 seconds!

To not feel so bad for him, he will be following shortly for his sister’s wedding.

banana cakeI am sure if you have kids, means you always have a lot of bananas at home!

Bananas get ripe quickly especially in Doha it’s too hot! Whenever I see some getting too ripe I use them for cake. I tried too many recipes and this one came out the best. Why? because it’s not too sweet, it allows me to use chocolate. I love to pair bananas with chocolate! This cake is a pleasure to make!

Ingredients:

  • 200g flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 100g toasted walnut
  • 5-6 bananas (500g)
  • 125g butter
  • 125g brown sugar
  • 2 eggs
  • a pinch of salt

Toast the walnut in the oven for 5 mins and keep aside to cool while preparing the batter.

Cream the butter and the sugar in a processor or by hand then add the eggs one by one. Chop the walnut medium size and add it with the mashed bananas to the batter, usually I mash them with a fork when too ripe.

Mix well and start to sift in the flour, baking powder, baking soda, cinnamon and salt. Mix everything together until you have a nice smooth batter.

Preheat the oven to 170°C and bake for almost an hour in the middle shelf. Test the cake by poking a skewer into the middle, if the skewer comes out clean, it means your cake is ready.

It’s up to you if you want to add chocolate syrup. I melt 200 g of dark chocolate with 1 tsp of vanilla in a bowl and that’s it.

Now the fun part for my baby is when i prepare for him the banana skewers to eat with the cake. it’s a nice way to decorate the cake and please your kids.

I am sure you will get a lot of smiles and mmmm and yumms when you serve this cake

it’s dessert time! Sometimes you wish to give your kid other than fruits and still being healthy. A simple and homemade cake is an option. Here is a simple recipe that you will never forget and it will be ready even before you finish reading the post.

Ingredients:

  • 170g butter
  • 170g sugar
  • 170g flour
  • 3 eggs
  • 1 tsp vanilla

Mix the butter + sugar and add the eggs one by one, then the flour and vanilla.

Pour the cake batter in a cupcake mold,personally I find it more practical and easy to have them as portions to take them with me in the afternoon when we go to the park

I am teaching my boy the animals, so I found it nice to decorate it with animal cutouts.

Very easy to DIY, print animal faces, cut them out and stick them on toothpicks as the picture shows.

There was no way but to start with my birthday cake, since this blog was a gift from my husband on my birthday.

I love to prepare the cake by my self especially the birthday ones, it makes the occasion more special and memorable for your loved ones.

Here is one of my favorite cakes, “foret noire”.

Ingredients:

  • 2 cups of flour
  • 1 1/2 cups of sugar
  • 3/4 cup, unsweetened cocoa powder
  • 11/2 tsps of baking soda
  • 1 tsp of baking powder
  • Pinch of salt
  • 1 cup of milk
  • 1/2 cup of vegetable oil
  • 1 tsp of vanilla essence
  • 1 cup of hot water
  • 3 eggs

For layering:

  • Whipping cream
  • Tinned mix fruits – 1 large tin

Method

-Preheat oven to 175 degrees Centigrade. Grease and flour two 9″ cake pans

– In a large bowl, sieve the flour, cocoa powder, baking soda, baking powder and salt. Add the sugar and mix well with the dry ingredients.

– Make a well in the center and add the milk, oil, vanilla essence and eggs and mix

– Pour the cake batter into the prepared cake pan and bake in the middle rack of the oven for 40 mins or until a skewer comes out clean.

– Cool for 30 mins before inverting .

– Bring to room temperature, divide in 3 equal parts then layer it with the cream and fruits.
