Fasoulia mtabbalé secret seasoning – vegan Lebanese butter beans


fasoulia mtabbale - vegan butter beans|marmite et ponponLebanese mezze are so versatile. You can serve them as appetizers, side dish or even main dish. All  depending on how and with what. During lent, this vegan butter beans mezze (fasoulia mtabbalé) is served with bread or potato to be a main dish.

For 1kg butter beans, boiled until tender (yields 4 servings) you need for seasoning:

 

  • 2 lemon juice
  • 1 garlic clove minced
  • 3/4 cup olive oil
  • salt to taste

fasoulia mtabbale -vegan butter beans|marmite et ponponApparently it’s a very easy and quick dish to serve. You boil the beans until tender and you mix with the seasoning ingredients. BUT! there is an astuce to tell you about, that gives the deep flavor and richness. It’s not a secret ingredient but the way you prepare the seasoning!

When you mix lemon, garlic, oil and salt, take from the beans (half cup almost) and mash it to become like a puree and add it to the seasoning. It gives it a thick texture and coat the beans perfectly when mixed. This way you will taste the deep flavor of seasoning in each bite.

One more thing to mention, prepare the fasoulia mtabbalé at least two hours before serving to absorb the seasoning. Serve it at room temperature or cold. Enjoy!

Spinach goat cheese tortellini

Do you believe that this succulent deep flavor dish is done in less than 15 minutes?! So if you are a working mum or just running short on time, this is the recipe you should save immediately; Spinach goat cheese tortellini!

The fresh tortellini (refrigerated type) are my favorite type, but if you don’t have at hands, the dry ones are just fine but requires more time to cook. This recipe calls for spinach goat cheese tortellini but any other tortellini type you find at your deli shop will also do, i know it’s not that easy to find in Doha.

This recipe yields 2 generous servings, you will need:

  • 300g spinach and goat cheese tortellini, fresh
  • 1 cup milk
  • 1 cup cream
  • 1tsp flour
  • 1/2 tsp powdered garlic
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup fresh or thawed chopped spinach
  • salt to taste

Cook tortellini according to package directions (usually it’s 3-5 minutes). Drain, rinse with cold water, and set aside.

Whisk milk, cream, flour and garlic powder and bring to medium heat, when the firt bubble starts to form add the Parmesan and spinach and cook together to combine for 2-3 minutes before folding in the tortellini. Simmer for 5 minutes and serve warm with a sprinkle of Parmesan cheese on top.

Believe me you will never order tortellini at a restaurant anymore! Such a delicious creamy dish ready at your table with no time and efforts. Another meatless dish for those days.

After a delicious lunch I always wish if there is leftover for dinner, so i recommend to double the recipe not to regret it later!

Watermelon slush – Say goodbye cheers to Lebanon summer days


watermelon slushOur vacation has come to an end, it’s time to pack  and go back to Doha!

I became so damn professional in packing, i can fit a whole house in my bag! It became as easy as drinking watermelon 😉

A perfect watermelon slush to beat the heat and say goodbye cheers to beautiful summer that brought  me a lot.

watermelon slushThis refreshing drink comes together in just 5 minutes. All you need is:

  • 3 cups diced seedless watermelon (or almost 500g)
  • 1 cup ice (7-8 ice cubes)
  • 1 1/2 tbsp sugar
  • one lime juice optional

Place watermelon, ice, sugar and lime (optional) in a blender and blend until smooth. This quantity serves 4 cups.

You can replace the lime with lemon, it also works and gives the tanginess you need in your drink, or keep it simple and sweet as is without any addition.

To booze it up, add vodka and enjoy!

watermelon slushThere is another way of making this slush, if you have time, by putting the seedless diced watermelon in freezer a day ahead or overnight. This way you eliminate using ice cubes, you only blend the watermelon, sugar and lime (optional) until smooth! I like this method, the flavor turns out stronger!

Upside down peach cake


upside down peach cakeI’m currently having a very busy and sleepless summer especially after delivering my baby. But being in Lebanon with the abundance of fresh fruits, I couldn’t but turn the oven to bake this upside down peach cake.

A very easy and quick recipe, and doesn’t require too much ingredients.  I am sure you all have them at home even the peaches, it’s the season and it is at its peak (in July and August).

Who can resist this mouth watering cake. Preheat your oven and go ahead do it, trust me it took less time to prepare it than writing the post 🙂

You need:

  • 3/4 cup softened butter, divided
  • 1/2 cup brown sugar
  • 4-5 peaches sliced
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 1/4 cup all purpose flour
  • 1/2 cup milk
  • pinch of salt

Preheat oven to 180°C. Grease a 9″ pan with a quarter of the softened butter. Dust it with the brown sugar then layer the peach slices over.

In a deep bowl beat the remaining butter with the sugar until light and fluffy. Beat in the egg and vanilla. Add the flour, baking powder and salt, beat well then add the milk. Spoon the mixture over the peaches.

Bake for 30 mns or until an inserted wooden skewer (or toothpick) comes out clean. Let it cool before inverting onto a serving plate.

upside down peach cakeServe it warm or cold, as per your taste. I personally like it cold. If you want to jazz it up, serve it with ice cream to beat the heat, especially it’s too hot nowadays!
