The wondrous aroma of coriander and citrus that perfumes the house provokes a feeling of excitement.

You still don’t know what to cook for the weekend? Watch that golden brown and gleaming chicken! Simply elegant and inviting!

To try it you need:

  • 12-14 pieces of chicken (could be thighs, drumsticks or breast)
  • 4 medium potatoes sliced
  • 1/2 cup of olive oil
  • 2 lemons (one juiced and one sliced)
  • 1 sliced orange
  • 1 tsp garlic powder
  • 1 tsp dried coriander
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • fresh coriander for garnish

Directions:

In a bowl mix together oil, lemon, garlic, coriander, onion, salt and pepper.

Soak in the chicken for marination and transfer all to a baking plastic bag. Leave it for 3-4 hours or better for an overnight in the fridge.

Take your chicken out of the fridge 30 minutes before it goes into the oven.

Preheat your oven to 220°C.

Place chicken in a baking dish and spread them evenly. Arrange slices of lemon, orange and potato around and under the chicken. Sprinkle with fresh coriander and drizzle a bit of olive oil.

Bake uncovered for about 40 to 45 minutes, et voila!!

  1. I made this last night and actually I thought it was a bit too lemony. Maybe the orange wasn’t sweet enough or the meat was not enough (I used 8 drumsticks, instead of 12, because my pan is not big enough) but I thought it may have been better to add a tablespoon of honey or some dried fruit, e.g. apricots or cranberries. But it was definitely very interesting and juicy and I’ll probably make it again either with more meat or with some dried fruit or both.

    • You said it 🙂 the meat was little definitely. If you can’t find sweet oranges you can add one tablespoon of honey or brown sugar or simply eliminate one lemon from the recipe. Thank you for your feedback Bobby and let me know how it turns to be with dried fruits:)

    Definitely on my list of things to cook. I would rather have real onions and garlic though. Organic (no artificials) is the best way to go.

    • absolutely yes, you can substitute with fresh ones. Powdered doesn’t mean artificial, they are real as well, but i use them because they are milder and blend it smoothly, my husband doesn’t like the fresh ones. I am happy this recipe is on your list of things to cook 🙂

  7. Looks very yummy! This is the second recipe you post mixing oranges/orange juice and chicken. A winning combo! I might just start using orange juice every time I cook chicken.
