Today is a happy day! My parents are coming to doha to spend easter holiday. I am so excited! I want everything to be perfect and have a warm welcome.
What’s better than this spectacular chocolate cake with these sexy red fruits and dark chocolate ganache!
It’s a heavenly delicious cake, and i want to share with you the simple recipe and how to decorate step by step.
First to bake the cake, we need:
- 2 cups of flour
- 1 1/2 cups of sugar
- 3/4 cup, unsweetened cocoa powder
- 11/2 tsps of baking soda
- 1 tsp of baking powder
- Pinch of salt
- 1 cup of milk
- 1/2 cup of vegetable oil
- 1 tsp of vanilla essence
- 1 1/2 tbsps of instant coffee powder
- 1 cup of hot water
- 2 eggs
In a large bowl, sieve the flour, cocoa powder, baking soda, baking powder and salt. Add the sugar and mix well with the dry ingredients.
Make a well in the center and add the milk, oil, vanilla essence and beaten eggs and mix. Finally add the hot coffee melted in the cup of hot water and mix.
Pour the cake batter into the prepared cake pans and bake in the middle rack of the oven (180ºC) for 40 mins or until a skewer comes out clean. Start checking from 35 mins onwards.
Cool for 30 mins before inverting onto a wire rack.
Meantime lets prepare the ganache:
- 450g dark chocolate
- 2 cups of heavy cream
The chocolate must first be chopped into small pieces so that it will melt evenly.
Put chocolate into a large heatproof bowl. Bring 2 cups of cream just to a boil over medium-high heat or put for 3 mins in microwave; pour over chocolate. Let stand 10 minutes.
Stir the mixture very gently, incorporating the cream steadily, without overworking. The mixture should begin to appear glossy.
Make sure the cake is completely cool.
Pour ganache over cake
It already started to look fabulous!!
Wash and dry the red fruits and spread them evenly on ganache on top of the cake
Sprinkle icing sugar over
That’s what i call a pleasure for the eye!
Now my cake is ready to welcome my dearest parents. Can’t wait 🙂

this recipe calls for a 10 inch springform pan. I used 11 inch loaf pan 🙂 It’s 12 cups in volume, this could help you.
